**SUMMARY**:
Manages and supervises the food and beverage service of the Copper Room. This position is critical to the quality image of the hotel, and the Maitre d' maintains the high company standards by performing the following duties:
**ESSENTIAL DUTIES AND RESPONSIBILITIES**:

- Manages and supervises all Copper Room staff, ensuring that they present a neat and well-groomed appearance, wear their name badges and carry out all their duties to specified standards.
- Greets and seats customers.
- Handles reservations.
- Assists service staff when necessary
- Controls the reservation book to facilitate maximum usage of space.
- Checks the catering function book and contracts daily.
- Checks, maintains and sets the service standards; food presentation and quality must be at a consistently high level.
- Brings deficiencies to the attention of the Director of Food and Beverage and records for follow up by the Executive Assistant Manager.
- Ensures that all working areas, furnishings and equipment are maintained to a high standard of cleanliness and repair.
- Prepares weekly schedules, daily labour cost report. Distributes paycheques.
- Prepares monthly labour cost forecasts and food and beverage revenue forecasts and annual budget.
- Maintains food, beverage and labour costs as budgeted and improves on costs wherever possible without sacrificing quality.
- Prepares all necessary requisitions for supplies and equipment required.
- Participates in the revisions of Copper Room menus and the upgrading of service.
- Attends management meetings.
- Investigates all guest complaints and staff grievances and advises the Director of Food and Beverage and the Executive Assistant Manager.
- Initiates, promotes and implements promotions according to the marketing plan.
- Compiles and maintains an operations training manual.
- Develops and maintains all wine lists, beverage menus and beverage inventories.
- Other duties may be assigned.

**SUPERVISORY RESPONSIBILITIES**
- Manages associates in Copper Room.
- Is responsible for the overall direction, coordination, and evaluation of this unit.
- Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.
- Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

**EDUCATION, EXPERIENCE AND SKILLS REQUIRED**:

- One year certificate from college or technical school.
- one-year related experience and/or training.
- or equivalent combination of education and experience.

**LANGUAGE SKILLS**
- Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations.
- Ability to write reports, business correspondence, and procedure manuals.
- Ability to effectively present information and respond to questions from groups of Managers, clients, customers, and the general public.

**MATHEMATICAL SKILLS**
- Ability to balance cash and credit.
- Ability to contribute to profit plan and budgeting process.

**REASONING ABILITY**
- Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
