**Job Overview**:
The Head Butcher plays a critical role in the success of the operation, it is a skilled trade role responsible for all aspects of meat processing, inventory management, and technical staff development. This position requires strong technical skills and leadership ability to ensure the highest quality of product, exceptional customer service and profitable operation. This is a hands-on leadership position that also requires a strong background in meat preparation, and commitment to food safety.

**Duties**:

- Oversee and execute all whole-animal cuts, specialty butchery, and meat preparation for retail sale.
- Maintain the highest standards of food safety, sanitation, and product quality.
- Manage meat inventory, control portioning, and ensure mínimal waste to drive profitability.
- Train, mentor, and supervise junior staff (Butchers/Meat Cutters) to build a highly skilled team.
- Collaborate with the General Manager on product selection, ordering, and strategic planning for the shop.
- Supervise the preparation, portioning, packaging, and display of meat products to meet company standards.
- Maintain deep knowledge of primal and secondary cuts.
- Create attractive, fresh product displays.
- Strictly adhere to all food safety, hygiene, and company standard operating procedures (SOPs).
- Maintain detailed records for all inventory levels, sales transactions, waste logs, and equipment service.
- Oversee and control the budget for product cost, labor expenses, and inventory shrink to ensure profitability.

**Qualifications**:

- High school diploma or equivalent (preferred).
- Safe Food Handling Certification
- Works in a Safe and responsible manner.
- Available to work flexible hours.
- Experience with staff supervision, training, and mentoring.
- Proven experience as a senior butcher, meat cutter, or a Butcher Manager, ideally with experience in a specialty or retail environment.
- Demonstrated technical proficiency in all butchery techniques, including advanced breakdown and preparation of specialty cuts.
- Familiar with food safety and hygiene protocols.

**Equipment**:

- Power grinder
- Band saw
- Slicing machine

**Physical Demands**:

- Constant lifting of up to 20 pounds
- Constant hand coordination, reaching and gripping
- Frequent standing, squatting, bending, walking, twisting, pushing or pulling
- Occasional lifting of between 20-100 pounds
- Occasional exposure to cold temperatures

**Job Types**: Full-time, Permanent

Pay: $25.00-$26.00 per hour
