- **Overview**_
We are currently hiring for a full time Meat Cutter. As a Meat Cutter you will be responsible for processing and preparing a variety of meats from full carcass for retail case and orders.
- **What you will do**_
As a Meat Cutter, you will:
- Check order book every morning. Fulfill customer order requirements to best of ability.
- Set up room for daily production and Fill sinks with soapy water and sanitizer.
- Breakdown beef carcass, bone out and seam out sub-primals.
- Prepare and place meat cuts in retail case to our standards and specifications.
- Cut, bone, trim, shape, lace, tie, skewer, cure, smoke, tenderize, marinade and grind meats, such as beef, pork, poultry, bison, elk and lamb.
- Prepare specialty cuts of meats ordered by customers
- Receive, inspect, and store meat upon delivery, to ensure meat quality
- Record quantity of meat issued to the deli, kitchen, customer, and wholesale orders.
- Maintaining, filling and rotating product in meat cases
- Maintain Hopcott’s high standards for product guidelines in sanitation, freshness, trimming, cutting and customer service
- Helping to verify and unload meat deliveries
- Selling product by providing customers with information needed to make product related decisions.
- Moving meat from coolers to cutting area and returning to coolers at end of day
- Cryovacing fresh meats
- Custom cut freezer packs, hinds, fronts, sides custom orders and beef shares.
- Always keep knives sharp, maintain clean working areas and good hygiene.
- Overlooking apprentices and assisting with training.
- **What you will bring**_
You will bring the following skills and experience to Hopcott:
- At least 1 year of relevant experience with breaking down carcasses and some retail cutting experience.
- Knowledge of Carcass anatomy, retail cuts, sub-primals.
- Working in refrigerated/freezer areas and with hot/cold water
- Working with raw meat (Fresh/Frozen)
- Working with sharp knives, slicers, bandsaw, and grinders
- Able to lifting/moving beef carcasses
- Food Safe Level 1

**Compensation**:
This position pay an hourly wage of $25 per hour.
