Salt Spring Island, Canada Hastings House Country House Hotel Full time

The Chef Tournant will work primarily with the Executive Chef and Executive Sous Chef and will assist in training and managing junior members of the kitchen staff. The incumbent will also work with the front-of-house management and other service staff to ensure a smooth flow of orders from the kitchen to the table following a high service philosophy.

**Responsibilities**
- Work in a variety of food preparation and chef stations in the gourmet kitchen as required, preparing ingredients, canapés, and cooking and seasoning dishes
- Act as chef for 2 gourmet breakfast shifts
- Prepare and plate dishes according to our high standards and according to menu specifications
- Ensure the cleanliness of kitchen stations
- Be versatile in preparing dishes according to allergy and dietary requirements
- Work under the direction of the Executive Chef and Executive Sous Chef
- Help to manage junior kitchen staff
- Work cross-functionally with the Dining Manager (and Assistant) to ensure that culinary production consistently exceeds guest expectations

**Skills**
- Understanding and knowledge of the fine dining restaurant industry is a definite asset
- The utmost professionalism and attention to detail
- Strong personal initiative
- Experience with both A la Carte and Group dining gourmet food preparation
- Red Seal is an asset
- Experience leading a kitchen team
- Exceptional problem solving, communication and multi-tasking skills
- Must be able to work efficiently in a fast-paced environment and be able to maintain organization with a positive attitude

Contract length: 8 months

Pay: $26.00-$27.00 per hour
