MATRIX is looking for an experienced **Second Cook**at one of our remote camps. In this position you will report to the First Cook.

**Responsibilities**:

- Prepare lunch and dinner
- Use seasonal garden produce for meals
- Prepare baked goods and desserts from scratch.
- Develop menus that reflect site preferences and dietary restrictions.
- Maintain sufficient food inventory for site resident numbers.
- Implement and execute a Food Safety Plan using advanced HACCP recording methods.
- Place and receive grocery orders, and maintain sufficient food inventory for site resident numbers.
- Liaise with grocers for quality, quantity and back orders.
- Maintain a well-organized and clean food storage area.
- Ensure the “first in first out” rotation procedure to support food inventory control.
- Execute safe food storage and labeling of potential food allergy items.
- Participate in daily toolbox meetings.
- Provide kitchen facility orientation and ongoing coaching/training to incoming kitchen staff.
- Conduct monthly worksite inspections as it relates to the kitchen facilities.
- Ensure kitchen staff performs tasks according to safe work practices and safe job procedures.
- Report any unsafe conditions and/or equipment issues to Resort Manager.
- Report all incidents and accidents immediately.
- Ensure good housekeeping in the work area at all times.
- Maintain a high performing, team orientated and productive work environment.

**Required Knowledge & Experience**
- Minimum of three (3) years working in a Cook position.
- Organizational and problem-solving abilities.
- Strong interpersonal and communication skills.
- Proficient computer skills.
- Conflict resolution skills.
- Highly motivated, team-oriented individual with attention to detail.
- Physical ability to lift a minimum of 50 lbs.
- Able to lift and move heavy objects, walk and stand for long periods of time
- Able to maintain a high level of performance over a 10 - 12 hour shift.

**Preferred Licensing & Certifications**:

- Food Safe Handling Certificate and WHMIS Certificate.
- Culinary Diploma and/or Red Seal Designation preferred
- Previous experience working in a camp setting.

**Please note that references and a criminal record check is mandatory for this position.**

This position works on a 3 week in / 3 week out rotation (**Fully Remote**). Preference will be given to local residents and areas in proximity to the local communities of these camps.

**Salary Range**

$325/day - $350/day depending on skills and experience.

**MATRIX recherche un Second Cuisinier expérimenté pour l'un de nos camps éloignés. Dans ce poste, vous reporterez au Premier Cuisinier.**

**Responsabilités**:

- Préparer le déjeuner et le dîner
- Utiliser les produits de jardin saisonniers pour les repas
- Préparer des pâtisseries et des desserts à partir de zéro
- Élaborer des menus qui reflètent les préférences du site et les restrictions alimentaires
- Maintenir un stock de nourriture suffisant pour le nombre de résidents sur le site
- Mettre en œuvre et exécuter un plan de sécurité alimentaire en utilisant des méthodes avancées d’enregistrement HACCP
- Passer et recevoir les commandes d’épicerie et maintenir un stock alimentaire suffisant pour le nombre de résidents sur le site
- Collaborer avec les épiciers pour la qualité, la quantité et les commandes en attente
- Maintenir une zone de stockage alimentaire bien organisée et propre
- Assurer la rotation « premier entré, premier sorti » pour soutenir le contrôle des stocks alimentaires
- Exécuter un stockage sûr des aliments et l’étiquetage des articles susceptibles de provoquer des allergies alimentaires
- Participer aux réunions quotidiennes de sécurité
