We are looking for a head baker to join our team. This person will have full reign over the bakery department with the ability to write menus, choose ingredients and create products of their own, train staff and help manage the overall operation of Hanks If this sounds like something you might be interested in, keep reading

**JOB DESCRIPTION**

The Head Baker will be responsible for overseeing all aspects of the baking department, and the production of all baked items including but not limited to; artisan sourdough and traditional breads (pan loaves, boules, baguettes, flatbreads, focaccia, rolls, bagels, english muffins etc), laminated doughs (puff pastry, croissant dough), muffins, scones, cookies, tart doughs, sweet and savoury fillings etc.

**RESPONSIBILITIES**
- Ensure department and all stations are kept clean and organized at all times (this is a completely open plan kitchen)
- Oversee and ensure that all Foodsafe and Sanitation requirements are being followed including batch logging, food prep logging, sanitation logging, FIFO procedures
- Maintain equipment to the highest standard of cleanliness and report maintenance issues
- Oversee, manage, and train a number of staff and quality control of their production
- Food costing and labour management
- Daily, weekly and monthly menu production making use of what is available or in season in accordance with food cost and budgetary guidelines
- Ordering and inventory of all items as related to the bakery department
- Assist with special events
- Assist when necessary to help out with food service or act in a managerial capacity for the entire operation in absence of Louise / Aaron.

**EDUCATIONAL REQUIREMENT**
- Red Seal Certification
- 3-5 years in a similar position
- Foodsafe Level 1

**SKILLS AND QUALIFICATIONS**
- Must be friendly and courteous;
- Has high stamina and can handle long and busy days on their feet;
- Can lift heavy things like garbage bags and bags of flour;
- Knowledge of general bakery equipment, how to operate and maintain the latest technology in baking (proofer retarder, dough sheeter, rational combi oven, zoom 1212 deck oven with loader)
- Works well either in a team or alone; and
- Willing to work longer shifts when necessary, weekends, and holidays.

Salary to be determined based on experience.

Pay: $60,000.00-$65,000.00 per year

**Experience**:

- culinary management: 3 years (required)

Licence/Certification:

- Red Seal Certification (preferred)
