Culinary Manager

**Summary of Position**

The Culinary Manager is responsible for the entire culinary experience for a handful of elite families in Muskoka. This includes, but is not limited to designing, preparing, creating and serving exquisite meals, ensuring a desirable dining atmosphere, and suggesting/coordinating self-prepared meal ideas for consumption while chef is absent. The incumbent will act as a one person show, taking pride and ownership over each kitchen and meal experience from start to finish.

**Job Duties**
- Plan and create healthy, memorable meals
- Purchase ingredients
- Prepare dishes
- Set table or dining space
- Serve meals with upmost professionalism
- Clean up kitchen and dining space
- Suggest unique drink pairings
- Ensure cleanliness and hygiene is maintained in the various kitchen areas including refrigerators and pantries
- Directly responsible for the production and plating of all food service
- Directly responsible for maintaining the highest quality food style possible
- Grocery shop for clients whenever requested
- Provide input in menus both during plated meals and throughout the week
- Ensure kitchen and preparation spaces are clean upon departure
- Create welcome dining experience
- Seek out and focus on local, health conscious cuisine
- Strive to exceed client expectations but creating new and trending meal ideas
- Strong focus on aesthetically pleasing presentation
- Respond in a positive and timely manner to all internal and external guest requests and complaints
- Seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity without compromising our clients' satisfaction
- Responsible for the complete kitchen operation, setting families up for success while not on property
- Maintain product consistency by conducting inspections of seasonings, portion, and appearance of food
- Completion and compliance of the Apex Construction Muskoka Orientation.
- Attend designated meetings, events, menu and wine tasting.

**Requirements**:

- High School Diploma or equivalent required.
- Culinary Education Trade Papers, Red Seal or equivalent required.
- Certifications as required to comply with provincial regulations.
- Food Safe Certification.
- Minimum of 18 years of age to handle alcoholic beverages.
- Experience with vegan, vegetarian and gluten-free meals
- Minimum of 5 years' combined experience in the trade of cooking.
- Thorough background in banquets, fine dining, and catering.
- Food and beverage culinary management experience with demonstrated leadership.
- Extensive knowledge of food handling and sanitation standards.
- Ability to acquire and maintain relationships
- Knowledge of overall operations as they affect kitchen and related areas.
- Effective influence skills.
- Ability to effectively manage labour productivity.
- Strongly demonstrated creativity in all areas relating to food.
- Excellent communication and interpersonal skills.
- Self motivated, with a positive attitude and a consistent display of professionalism.
- Innovative, detail oriented, and quality conscious.
- Ability to recognize, influence, and follow foodservice trends in preparation and presentation.

**Salary**: $22.00-$24.00 per hour

Schedule:

- 10 hour shift
