We are looking for an energetic individual to join the Pastry Team in the role of Commis 2. This Person will be responsible for preparing and servicing all food items, under the general supervision of the Pastry Chef and according to the production standards established by the Executive Chef and the Pan Pacific Hotel. In addition this position will do early morning Baker shifts.

KEY RESPONSIBILITIES*

The key responsibilities of the Commis 2 include but are not limited to:

- Assist in the preparation and service of all food items for a la carte and/or buffet menus according to hotel recipes and standards.
- Set up dessert buffets and plated dessert functions according to hotel standards.
- Maintain and adhere to food safety standards and adhere to the guidelines and responsibilities of HACCP (Food).
- Prepares varieties of Cakes, Cookies, breads/ brioche, French pastries, custards, gelato and chocolates.
- Preparing and handling of basic or specialized chocolate work; Creative cake decorating and proper masking.
- Sauce preparation to include; puree fruits, creams, sauces, compote, jelly and pate fruit
- Be able to work all areas (stations) of the pastry department.
- Perform other related duties as required
Physical Aspects of Position include but are not limited to:

- Constant standing and walking throughout shift
- Frequent lifting and carrying up to 30 lbs.
- Occasional kneeling, pushing, pulling.

Ability to work well under pressure in a fast paced environment.
- Has the ability to be innovative, creative and participate with new ideas for menus or special functions.
- Familiar with Pastry tool & machinery techniques.
- Must be well-organized and maintain a clean work area.
- Self-motivated and able to complete responsibilities in a timely manner with little or no supervision.
- Ability to work flexible schedules (including early mornings, evenings, weekends and holidays)
- Maintains highest standard of professionalism, ethics, grooming and attitude towards guests and associates.

**Qualifications and Technical Experience**
- 3 - 4 years’ experience in the pastry field required
- Diploma/Certification in a Culinary discipline an asset.
- Valid Food Safe certification required.
- Fluent English language skills; both written and verbal
- Schedule: Rotating Shifts, early morning start time as early as 4:00am; Weekends & Holidays Involved
