Yuan’s Hot Pot Richmond (aka Yuan’s Chuan Chuan Xiang) is an Asian style hotpot restaurant established since 1996 in the city of Chengdu, Sichuan in China. We are a restaurant chain founded with the vision of showcasing the authentic taste of Chengdu Hot Pot to the world. Our restaurant is located in Richmond, BC. Yuan’s Hotpot Richmond started in 2015 and we are continuing to grow our business.
**Job Title**: First Cook
**Reports to**: Store Manager
**Job Summary**:
A First Cook in a hotpot restaurant is a key figure in delivering a delightful dining experience to customers. They are responsible for supervising and actively participating in the preparation, cooking, and presentation of hotpot dishes, ensuring exceptional taste, quality, and adherence to food safety standards, as well as overseeing kitchen operations, maintaining inventory, planning menus and training other staffs.
**Key Responsibilities**:
**1.Food Preparation**: Prepare ingredients, such as meats, vegetables, and other components, as well as following recipes to create a wide range of menu items.
**2.Cooking and Presentation**: Oversee the cooking process, ensuring that dishes are cooked to perfection and presented attractively. This includes grilling, frying, baking and other cooking methods.
**3.Supervision**: Lead a team of kitchen staff, including sous chefs, line cooks, and kitchen helpers. Delegate tasks, manage workflow, and provide guidance to maintain an efficient and organized kitchen.
**4.Menu Development**: Collaborate with the store manager, and contribute to menu planning, suggest new dishes or variations to keep the menu fresh and appealing to customers.
**5.Quality Control**: Monitor food quality and ensure that all dishes meet established standards for taste, presentation, and portion size. This includes tasting and adjusting seasonings as necessary.
**6.Food Safety and Sanitation**: Adhere to strict food safety and sanitation guidelines, maintain a clean and hygienic workspace to prevent foodborne illnesses.
**7.Inventory Management**: Assist in managing kitchen inventory, including ordering ingredients, tracking stock levels, and minimizing food waste.
**8.Training**: May be responsible for training new kitchen staff and ensuring they understand and follow standard procedures and safety protocols.
**9.Adherence to Regulations**: Stay informed about relevant health and safety regulations and ensuring the kitchen operates in compliance with local and national food safety standards.
**Qualifications and Skills**:
**1.Culinary Education**: A formal culinary education from a recognized culinary school or institute is highly desirable. This education provides a solid foundation in cooking techniques, food safety, and kitchen management.
**2.Experience**: 1-2 years working experience in a hotpot restaurant or a similar Asian cuisine restaurant is an asset.
**3.Hotpot Expertise**: In-depth knowledge of various hotpot styles and the ability to prepare and customize broths to suit different tastes. Familiarity with various hotpot ingredients, including meats, seafood, vegetables, and noodles, is crucial.
**4.Leadership Skills**: Strong leadership and communication skills are essential, as you may be supervising kitchen staff and you should be able to delegate tasks, coordinate the kitchen team, and maintain a positive and efficient work environment.
**5.Food Safety Knowledge**: Comprehensive knowledge of food safety and sanitation practices is non-negotiable. Ensuring that all ingredients are handled and stored safely to prevent foodborne illnesses is a top priority.
**6.Physical Endurance**: Working in a hotpot restaurant can be physically demanding. You should have the stamina to stand for extended periods, lift heavy pots and ingredients, and move quickly during peak dining hours.
**7.Language Skills**: Fluent in spoken English, Mandarin and Cantonese is highly desirable.
**Job Status**: Permanent, Full-time, 35 - 40 hours/week
**Salary**: $32.00/hour

The First Cook will work in a fast-paced, restaurant environment. This position will require evening and weekend work.
