- Setup, organization and continued cleanliness of the dishwashing area
- Use of and continued cleanliness of the dishwashing machine(s)
- Organization of incoming and outgoing dishes
- Proper use of chemicals and temperature controls to ensure that all items are appropriately cleaned, sanitized and ready for use
