**Job Title**: Prep Cook & Fornaio (Pizza/Bread Baker) - Full Time
**Location**: Lou Pécou, Halifax, NS
**Position Summary**:
At Lou Pécou, we celebrate Italian culinary traditions with a focus on _Pizza Classica_, artisanal breads, and fresh, seasonal ingredients. We are seeking a skilled **Prep Cook & Fornaio** to oversee all pizza baking and bread production before and during service. This role is essential to ensuring product quality, consistency, and timing for our guests dining experience.
**Key Responsibilities**:
- Prepare and portion doughs, breads, and pizza bases according to Lou Pécou recipes and fermentation schedules.
- Operate and maintain the pizza oven and bread-baking equipment.
- Bake pizzas, focaccia, and other bread items to order during service, ensuring consistent quality and presentation.
- Coordinate with the kitchen team to ensure efficient service flow.
- Maintain high standards of food safety, hygiene, and cleanliness.
- Monitor ingredient stock levels and communicate supply needs to the Head Chef.
- Assist in general prep tasks (sauces, toppings, etc.) before service.
- Contribute to continuous improvement of baking techniques and menu items.
**Requirements**:
- Previous experience as a pizza baker (_fornaio_), bread baker, or in a similar kitchen role.
- Strong understanding of dough fermentation, baking techniques, and oven management.
- Ability to work efficiently under pressure in a fast-paced environment.
- Commitment to maintaining high quality and consistency.
- Full-time availability, including evenings and weekends.
- Team-oriented attitude and clear communication skills.
Pay: $17.00-$19.00 per hour
Expected hours: 30 - 40 per week
