The Chef is responsible for ensuring high-quality food production by planning, preparing, and overseeing the delivery of nutritious and appetizing meals tailored to meet the diverse dietary needs of residents at the Glen Stor Dun Lodge (GSDL). This position ensures that food services align with Ministry of Long-Term Care regulations, resident dietary requirements, and infection control standards. The Chef collaborates with dietitians, healthcare professionals, and kitchen staff to provide meals that enhance residents' health and quality of life. Key Responsibilities Contribute to menu development adhering to dietary guidelines for long-term care residents, considering nutritional needs, special dietary restrictions, resident preferences and seasonal ingredients to enhance meal satisfaction. Oversee and participate in the preparation and cooking of meals, ensuring consistency, quality, and presentation align with established standards. Ensure all food preparation, handling and storage meets Food Safety and Health Canada regulations, including proper sanitation, safe storage, and compliance with local public health standards. Maintain accurate records of food temperatures, cleaning schedules, and inventory logs as required by regulatory bodies. Provide guidance to dietary aides, ensuring that they adhere to food safety standards, kitchen protocols, and operational policies. Assist with food inventory, ensuring sufficient stock of quality ingredients, and oversee ordering, stock rotation, and waste reduction practices to maintain cost-effectiveness and prevent shortages by conducting regular stock assessments. Adhere to the operational budget, ensuring cost-effective purchasing and food preparation while meeting quality standards and adhering to nutritional requirements. Work closely with other employees working in the GSDL and healthcare providers to ensure seamless delivery of meal services, that meals are tailored to the specific health needs of residents, including those with allergies, medical conditions, and dietary requirements and address any concerns related to resident satisfaction or food service delivery. Collaborate with the supervisor to improve the dining experience for residents, including adopting new culinary trends, sustainable practices, and enhancing meal presentation by staying informed about culinary trends, integrating innovative practices into the kitchen operations and participating in quality assurance programs and audits to continually enhance food service delivery. Leadership of Others N/A Position Requirements Education & Certifications: Diploma in culinary arts, or a related field with Red Seal Certification. Valid Food Handler Certification. Experience: Minimum of 5 years of experience in a professional kitchen or culinary setting. Knowledge, Skills, and Abilities: Culinary Knowledge & Techniques: Strong understanding of cooking techniques, menu planning, and meal preparation for Long-Term Care residents. Nutritional Knowledge & Dietary Management: Strong understanding of nutrition and dietary requirements specific to Long-Term Care residents, including knowledge of various medical diets and the ability to tailor meals accordingly while ensuring balanced nutrition and resident health. Food Safety & Compliance: Strong knowledge of health and safety regulations, food handling practices, and sanitation standards required to maintain a safe and hygienic kitchen environment. Budgeting & Cost Control: Strong skills in managing food costs, minimizing waste, and optimizing resource usage to meet budgetary targets. Time Management & Organization: Ability to coordinate food preparation schedules, manage multiple tasks efficiently, and maintain kitchen workflow during high-pressure situations. Problem-Solving: Strong analytical skills to address issues such as food shortages, equipment malfunctions, or unexpected dietary requests while maintaining high standards. Adaptability & Creativity: Ability to adapt to changing circumstances and develop creative solutions for menu adjustments or special resident requests while maintaining quality and consistency. Technical Proficiency: Experience using food service management software and electronic documentation systems. Working Conditions Work is performed primarily in a kitchen environment within the GSDL. Flexible to work various shifts, including weekends and holidays, as per the facility's needs. Cognitive demands include being able to recall recipes, meal plans, resident preferences, and dietary restrictions, and managing multiple cooking processes simultaneously while ensuring safety, quality, and efficiency. Physical demands include extended periods of standing and walking, frequent chopping, stirring, carrying, and lifting, and other repetitive kitchen tasks.
