About the Role

We are seeking an experienced and skilled Executive Chef to join our team at Château de Mercuès. As a key member of our culinary team, you will be responsible for managing the production and execution of all menus offered by our luxury boutique property.

Key Responsibilities

  • Manage and supervise a team of kitchen staff, including prep cooks, line cooks, and dishwashers
  • Train and develop the skills of all kitchen staff
  • Oversee the work of all kitchen staff, ensuring that all standards of safety and quality are strictly observed
  • Participate in staff education plans, including on-the-job training
  • Meet Health & Safety requirements
  • Be a personal representation of the service and overall hospitality of the staff of the property
  • Exceed the expectations of internal and external customers
  • Inspect food preparation and serving areas to ensure observance of safe, sanitary food handling practices
  • Supervise, instruct, and assist with cleaning duties as required, and maintain a clean and safe work station
  • Supervise and assist when needed with receiving and storing food orders
  • Oversee the work of all kitchen staff
  • Receives direction from the executive chef
  • Helps maintain a safe and sanitary kitchen, cleaning up spills and other potential hazards immediately
  • Trains newly hired kitchen staff and develops the skills of all kitchen staff
  • Makes sure adequate numbers of kitchen staff are scheduled to properly handle each day's business needs
  • Participates in employee evaluations and necessary disciplinary actions
  • Meets with guests in the dining room when required
  • Places orders for recipe ingredients and other supplies
  • Ensures that all standards of safety are strictly observed
  • Looks for ways to save the facility money while still providing top quality products and services for clients
  • Possesses the ability to handle any menu ranging from breakfast buffets to corporate lunch meetings with sandwiches to formal dinners with multi-course meals that are individually plated, including extensive tasting menus
  • Travels to offsite areas when an event is held at another location
  • Assists with the development of dishes and menus

Requirements

  • Minimum 6 years in a similar role
  • Must have the ability to multi-task while remaining focused on the goal
  • Must have excellent verbal communication and leadership skills
  • Be able to express creativity through food selections, preparation, and presentation
  • Must be detail-oriented
  • Must have the ability to remain calm in high-stress situations
  • Be able to solve problems quickly under pressure
  • Must have adequate upper body strength for heavy lifting and strong back and leg muscles for hours of standing, bending, and walking
  • Ability to communicate with, understand, empathize with, work with, and be tolerant of peers and supervisors
  • Ability to read, write, communicate, and comprehend verbal and written instructions in English
  • Ability to be accurate, concise, and detail-oriented
  • Ability to communicate effectively with staff at all levels of the organization
