About the Role
We are seeking an experienced and skilled Executive Chef to join our team at Château de Mercuès. As a key member of our culinary team, you will be responsible for managing the production and execution of all menus offered by our luxury boutique property.
Key Responsibilities
- Manage and supervise a team of kitchen staff, including prep cooks, line cooks, and dishwashers
- Train and develop the skills of all kitchen staff
- Oversee the work of all kitchen staff, ensuring that all standards of safety and quality are strictly observed
- Participate in staff education plans, including on-the-job training
- Meet Health & Safety requirements
- Be a personal representation of the service and overall hospitality of the staff of the property
- Exceed the expectations of internal and external customers
- Inspect food preparation and serving areas to ensure observance of safe, sanitary food handling practices
- Supervise, instruct, and assist with cleaning duties as required, and maintain a clean and safe work station
- Supervise and assist when needed with receiving and storing food orders
- Oversee the work of all kitchen staff
- Receives direction from the executive chef
- Helps maintain a safe and sanitary kitchen, cleaning up spills and other potential hazards immediately
- Trains newly hired kitchen staff and develops the skills of all kitchen staff
- Makes sure adequate numbers of kitchen staff are scheduled to properly handle each day's business needs
- Participates in employee evaluations and necessary disciplinary actions
- Meets with guests in the dining room when required
- Places orders for recipe ingredients and other supplies
- Ensures that all standards of safety are strictly observed
- Looks for ways to save the facility money while still providing top quality products and services for clients
- Possesses the ability to handle any menu ranging from breakfast buffets to corporate lunch meetings with sandwiches to formal dinners with multi-course meals that are individually plated, including extensive tasting menus
- Travels to offsite areas when an event is held at another location
- Assists with the development of dishes and menus
Requirements
- Minimum 6 years in a similar role
- Must have the ability to multi-task while remaining focused on the goal
- Must have excellent verbal communication and leadership skills
- Be able to express creativity through food selections, preparation, and presentation
- Must be detail-oriented
- Must have the ability to remain calm in high-stress situations
- Be able to solve problems quickly under pressure
- Must have adequate upper body strength for heavy lifting and strong back and leg muscles for hours of standing, bending, and walking
- Ability to communicate with, understand, empathize with, work with, and be tolerant of peers and supervisors
- Ability to read, write, communicate, and comprehend verbal and written instructions in English
- Ability to be accurate, concise, and detail-oriented
- Ability to communicate effectively with staff at all levels of the organization
- Exemplary interpersonal skills and ability to work cooperatively as a member of a team
- Effective time management skills to organize and prioritize workload
