Educational Requirements

Key Responsibilities
  • Prepare meats for processing by cleaning and ensuring quality.
  • Skillfully cut carcasses, sides, and quarters to meet specifications.
  • Trim and prepare standard cuts of meat with precision.
  • Wrap and package meats for display and sale.
  • Remove bones from various types of meat as needed.
  • Cut poultry into appropriate parts for various dishes.
  • Prepare fish by cutting into steaks and fillets.
  • Grind meats to create fresh products.
  • Slice cooked meats for service.
  • Shape, lace, and tie roasts, poultry, and seafood for presentation.
Equipment Proficiency

Familiarity with the following equipment is essential:

  • Band saw
  • Manual cutting utensils

  • Slicing machine
