Role Responsibilities:

The Culinary Specialist 1, reporting to the Head Chef or designated supervisor, is tasked with the daily preparation of nutritious and visually appealing meals for residents, guests, and staff. This position ensures that the evolving dietary requirements of the community are met while adhering to safe food handling practices.

  • Review menus and production sheets prior to meal preparation.
  • Implement proper food handling techniques in accordance with food safety regulations.
  • Conduct daily temperature checks for both hot and cold food items.
  • Perform daily audits of fridges, freezers, and storerooms, documenting findings on the daily audit form.
  • Prepare and serve meals for therapeutic or specialized diets as per planned menus.
  • Make necessary menu substitutions and document them in the Food Substitution Log.
  • Coordinate workflow and provide guidance to designated staff regarding meal production, delivery, and cleanup.
  • Manage ordering and receiving of consumable items following established purchasing protocols, maintaining inventory to minimize waste.
  • Adhere to scheduled meal service times.
  • Follow production charts, standardized recipes, and daily composite menus while operating within budget constraints.
  • Engage in planning and preparation for special occasions and themed meal days.
  • Participate in the orientation of new staff and contribute to community programs, meetings, and educational sessions.
  • Ensure a safe environment for residents, families, and staff through accident prevention, knowledge of emergency procedures, and proper use of supplies and equipment.
  • Contribute to organizational planning related to Food Services by providing input on menus, implementation, and schedules to uphold high standards.
  • Work collaboratively with all team members and supervisors.
  • In the absence of the supervisor, oversee department production and service, including staff direction and interdepartmental communication.
  • Perform additional related duties as necessary.

Qualifications & Skills:

  • Completion of Grade 12 or equivalent.
  • Graduation from a recognized Culinary Training program or a combination of education and experience.
  • Experience in large-scale food preparation, preferably in a healthcare or retirement environment.
  • Knowledge of Provincial Food Premises regulations and Canada's Food Guide to Healthy Eating.
  • Familiarity with special and therapeutic diets.
  • A minimum of 2-3 years of culinary experience.
  • Food Safe Level 1 Certificate; Level 2 is an asset.
  • Red Seal Certificate preferred.
  • Serving it Right certification is advantageous.
  • Strong understanding of sanitation standards.
  • Some supervisory experience is beneficial.
  • All successful candidates must pass a vulnerable sector Criminal Record Check in accordance with Provincial guidelines.
  • Demonstrated creativity, attention to detail, and organizational skills with the ability to delegate tasks.
  • Physical capability to perform repetitive tasks, lift up to 50 lbs, and engage in activities such as squatting, bending, standing, and walking as required.
  • Strong collaborative and teamwork skills.
  • Ability to work independently and follow instructions with minimal supervision.
  • Proficient in reading, writing, and speaking English, with the ability to understand verbal and written instructions.
