Job Overview

This role involves overseeing the management of culinary operations, including activity planning, resource allocation, budgeting, work organization, and team leadership to meet production objectives. The supervisor will ensure staff development and the execution of continuous improvement initiatives.

Key Responsibilities

Culinary Operations Management

  • Validates the production schedule in collaboration with the logistics team.
  • Organizes material and human resources as per daily, weekly, and quarterly requirements.
  • Ensures the availability of necessary materials and documentation for production.
  • Guarantees accurate and timely completion of production records and documents.
  • Enters production data into the ERP system.
  • Analyzes production issues and implements corrective measures.
  • Reviews and documents production records before submission to quality assurance.
  • Manages non-conformities until resolution.
  • Updates culinary documentation, including instructions and procedures.

Compliance and Safety

  • Ensures adherence to quality standards within the culinary department.
  • Participates in audits and self-inspections, ensuring departmental compliance.
  • Contributes to the development and monitoring of quality improvement programs.
  • Drafts and coordinates the implementation of procedures and instructions.
  • Initiates change requests and monitors deviations from established procedures.
  • Participates in product validation processes.
  • Supports validation activities related to equipment and processes.
  • Implements and enforces safety policies within the department.
  • Proposes safety enhancements through the safety program and follows up on actions taken.
  • Organizes incident analysis and recommends corrective actions.
Leadership Responsibilities
  • Leads and organizes the culinary team.
  • Sets performance objectives for team members.
  • Evaluates team contributions and recommends promotions or corrective actions.
  • Develops team members through tailored training plans.
  • Identifies staffing needs and participates in recruitment efforts.
  • Ensures effective onboarding and training processes.
  • Maintains a positive team environment.
  • Ensures compliance with HR policies and promotes the use of available resources.
  • Implements recommendations from audits.
  • Encourages innovation by engaging with team members.
  • Identifies areas for improvement in quality, cost, efficiency, and performance.

Resource Management

  • Prepares and manages the culinary department budget.
  • Proposes necessary investments for culinary operations.
  • Drafts specifications for investments and ensures their execution.
  • Sets annual performance goals for the culinary team.
  • Validates production standards, including efficiency and cost metrics.
  • Manages staff and equipment allocation based on operational needs.
  • Develops action plans to optimize production quality and efficiency.
  • Ensures implementation of preventive maintenance plans.
  • Maintains compliance with qualification standards.

Professional Relationships

  • Collaborates with multidisciplinary teams.
  • Acts as the primary contact for support services to address daily operational issues.
  • Ensures adherence to deadlines and communicates deviations to relevant departments.
  • Initiates and participates in improvement projects.

Required Qualifications:

a) Education

Bachelor's degree in culinary arts or related field.

b) Languages

Proficiency in English and French.

c) Experience

Minimum of 5 years in culinary production or related field.

Minimum of 5 years in personnel management.

d) Technical Skills

Knowledge of culinary processes and production tools.

Familiarity with production workflows and IT systems.

Understanding of regulatory standards and safety legislation.
