Key Responsibilities:

Reporting to the Executive Chef, Chef de Cuisine, and Sous Chef, your role as a Senior Cook will encompass the following:

  • Understanding and executing all kitchen operational policies, procedures, and training programs.
  • Collaborating with the Back of House management team to enhance guest offerings and elevate The Drake's reputation as a dining destination.
  • Ensuring a unique and consistent dining experience by actively managing the kitchen team and addressing any issues that arise.
  • Executing menu items from preparation to plating, ensuring timely delivery of main protein dishes.
  • Utilizing seasonal ingredients while maintaining comprehensive knowledge of all products used.
  • Continuously honing your skills and learning new techniques to enhance your culinary expertise.
  • Working collaboratively with Back of House staff to maintain a cohesive kitchen environment.
  • Ensuring cleanliness and organization of your station.
  • Setting up, breaking down, and cleaning the kitchen before and after service.
  • Adhering to company food safety and sanitation protocols.

Qualifications:

  • 3-5 years of progressive kitchen experience in a fine or fast-paced casual dining environment.
  • Demonstrated awareness of current culinary trends.
  • Experience in a high-volume establishment with availability for evenings, weekends, and special events.
  • Positive team player with a keen eye for detail.
  • Genuine passion for food and a strong work ethic.
  • Open to constructive feedback and adaptable, with a willingness to grow within the team.
  • Ability to maintain patience and diplomacy in a fast-paced environment.
  • Strong multitasking abilities and composure under pressure.
  • Excellent interpersonal and communication skills, both verbal and written.
