Position Summary
The Lead Culinary Specialist plays a crucial role in our culinary operations, based in a premier camp facility. This position operates on a rotation of 20 days on and 10 days off, with workdays extending to 11 hours. Transportation to the site is provided from designated locations.

Key Responsibilities

  • Prepare and cook a diverse range of meals, including meats, seafood, soups, poultry, and vegetables, ensuring high-quality standards.
  • Utilize various cooking techniques such as deep-frying, pan-frying, broiling, baking, boiling, grilling, sautéing, and steaming to deliver exceptional dishes.
  • Manage meal preparation within the allocated food budget while maintaining consistency in food quality and presentation.
  • Adhere to FOODSAFE standards for cooking, handling, storing, and labeling food products.
  • Engage in final food presentation tasks, including plating and garnishing.
  • Operate a variety of kitchen equipment, including stoves, ovens, steamers, grills, and broilers.
  • Assist in menu development, inventory management, and grocery procurement.
  • Contribute to the cleanliness and sanitation of kitchen and dining areas.

  • Minimum of 3 years' experience in the hospitality or food service sector.
  • At least 1 year of experience as a Sous Chef in hotels, resorts, restaurants, or camps, with a strong knowledge of both international and domestic cuisines.
  • Ability to work independently in certain environments.
  • Extensive practical and theoretical knowledge across all kitchen areas, including Hot Kitchens, Cold Kitchens, Pastry/Bakery, Butchery, and Banquets.
  • FoodSafe Level I certification is required; advanced food safety certification or HACCP certification is an asset.
  • Proficiency in computer applications such as Microsoft Excel, Word, Sysco, and Outlook.
  • Successful candidates must achieve a minimum score of 80% on the mandatory WHMIS test.
