Cold Prep Job Description

Royal Camp Services Ltd is a leading provider of remote location accommodations for workforce housing. We offer long-term and seasonal employment in the culinary, hospitality, remote site services, and remote site operations industries.

Our culinary team consists of experienced professionals with formal education, international training, and Red Seal Certification. We prepare a variety of meals using fresh produce, fine quality meats, and supplies. Our team is committed to providing clients with dietary restrictions, such as gluten sensitivity, with satisfying choices every day.

We are currently hiring for multiple Cold Prep positions at our Edmonton and Grande Prairie locations.

Key Responsibilities:
  • Complete daily sandwich inventory, monitor variety, and rotate products to ensure freshness
  • Prepare meats and vegetables for sandwiches with direction from the Chef
  • Mix and prepare sandwich fillings, including made-to-order products, build, cut, wrap, and add date stickers to sandwiches/wraps
  • Ensure mise en place is completed prior to end of shift (i.e., taking frozen ingredients out to thaw)
  • Monitor variety and consumption of salads, adjust quantities based on consumption
  • Prepare meats (i.e. bacon), pasta, and vegetables for salads, including repurposing leftover ingredients
  • Mix, cook (where applicable), and prepare salads, refill salad station as needed, and provide cold line of fruits, vegetables, cold meats, cheeses, pickles, etc.
  • Produce a variety of well-balanced and colorful salads, incorporating vegetables, fruits, and meats
  • Follow various diets, including vegetarian, vegan, cultural, and food allergies as directed by Chef or First Cook
  • Safely use all kitchen equipment under the direction of Chef or First Cook (i.e., fryer, mandoline, etc.)
  • Demonstrate proper knife skills
  • Ensure all daily, weekly, and monthly cleaning tasks are completed
  • Ensure food quality, food safety (including reporting all food allergies), and food standards are met
Requirements:
  • Must have attention to detail
  • Strong organizational skills and time management skills
  • Strong interpersonal and communication skills (including reading, writing, and speaking English)
  • Must be able to lift, move, push, pull, and carry up to 25 lbs.
  • Available to work multiple rotations, including 21-7, 10-4, 9-5, and 14-7
  • Available to work a day shift, afternoon shift, split shift, or night shift
Preferred Qualifications:
  • 1-2 years of previous relevant kitchen experience
  • Post-secondary culinary education
  • Valid Standard First Aid certification and an Alberta Health Services approved Food Safety Certificate
  • Ability to provide at least 2 professional work references
