POSITION OVERVIEW

The primary responsibility of the First Cook is to prepare and present high-quality dishes to order for guests, adhering to established guidelines across all service areas. The First Cook must ensure compliance with health and safety standards, proper storage protocols, and daily cleaning schedules.

KEY RESPONSIBILITIES

Duties include but are not limited to:

  • Reporting directly to the Chef de Partie or Sous Chefs.
  • Engaging with guests and colleagues in a friendly, service-oriented manner.
  • Maintaining regular attendance in accordance with Legends Hospitality's policies, adapting to business needs.
  • Upholding high standards of personal appearance and grooming, including wearing the appropriate uniform.
  • Adhering to Legends Hospitality's standards and regulations to promote safe and efficient operations.
  • Reading, interpreting, and following the menu accurately.
  • Delegating tasks to line staff regarding daily production and quality standards.
  • Training line staff as required or requested by the Chef.
  • Ensuring staff compliance with preparation standards and methods.
  • Completing food item production in accordance with established guidelines.
  • Assisting with daily food requisitions based on standard stock levels and storeroom policies.
  • Controlling waste and portion sizes to optimize food profitability and costs.
  • Maintaining cleanliness and sanitation in the kitchen at all times.
  • Reporting any kitchen faults to management and ensuring timely follow-up.
  • Ensuring safe and efficient use of kitchen machinery and equipment.
  • Collaborating with kitchen management on new food presentation ideas.
  • Communicating effectively with management regarding menu items, specials, and substitutions.
  • Coordinating with dishwashers regarding daily needs for events and preparation.
  • Following sanitation and health safety procedures diligently.
  • Maintaining composure and professionalism under pressure.
  • Executing additional duties as assigned by management.
  • Clearly conveying information and ideas.
  • Evaluating and selecting among alternative courses of action swiftly and accurately.
  • Addressing workplace problems effectively, including anticipating and resolving issues.
  • Listening to and clarifying concerns raised by colleagues and guests.
  • Assisting with inventory management on a daily, weekly, and monthly basis.
  • Following HCCAP procedures.
  • Ensuring timely fulfillment of contracts, productions, and daily requirements.
  • Communicating with management regarding contracts and functions.
  • Distributing contracts to relevant staff.
  • Performing various other duties as assigned for the benefit of the company and guests.

QUALIFICATIONS

To succeed in this role, candidates must demonstrate the ability to perform essential duties at a high level. The following qualifications are required:

  • Culinary Journeyman Red Seal Certificate or equivalent.
  • Minimum of years cooking experience or years as a Second Cook in a similar environment.
  • Previous experience in various kitchen roles including food production, buffets, banquets, catering, and menu planning is advantageous.
  • Familiarity with ordering and purchasing processes.
  • Proficiency in safely using various kitchen tools and equipment.
  • Computer skills are beneficial.
  • Strong understanding of food terminology, handling, and preparation.
  • Ability to follow directions effectively.
  • Flexibility to adapt to changing schedules, including evenings, weekends, and holidays.

WORKING CONDITIONS

Location: On Site

The physical demands of this position require the employee to sit, talk, hear, and use hands to handle controls. The employee frequently reaches with hands and arms, and is required to stand, walk, and stoop. Specific vision abilities required include close vision and the ability to adjust focus.
