Job Overview

Key Responsibilities

The Culinary Production Cook will be responsible for the precise and efficient preparation, portioning, cooking, and presentation of a diverse range of hot and cold dishes for various meal services, including breakfast, lunch, dinner, and special events. The primary duties include but are not limited to:

  • Delivering exceptional customer service while preparing and serving food.
  • Cooking to order a variety of dishes that require both quick and extensive preparation.
  • Performing cooking tasks typically associated with fast food operations.
  • Producing and serving food at various stations, including a la carte, buffet, or grill.
  • Ensuring all food is prepared in compliance with federal, provincial, and corporate standards to maintain high-quality service.
  • Following recipes and instructions for the preparation of soups, meats, vegetables, desserts, and other menu items.
  • Utilizing various kitchen equipment for measuring, mixing, washing, peeling, cutting, and shredding ingredients.
  • Tasting dishes, reading menus, estimating food needs, and maintaining accurate production records.
  • Cleaning and sanitizing work areas and equipment while adhering to all safety and regulatory protocols.
  • Producing both small and large batches of food using classical cooking techniques.
  • Preparing meals for customers with special dietary requirements.
  • Participating in training sessions on food safety and allergy awareness.
  • Complying with all safety policies and procedures.
  • Attending safety meetings and reporting any incidents promptly.
  • Performing additional duties as assigned.

Qualifications

Experience and Skills:

  • Proficient in preparing mother sauces and cooking stews and casseroles, with knowledge of various cooking methods such as steaming, roasting, and grilling.
  • A minimum of 3 years of experience in food preparation with strong knife skills.
  • Experience in a high-volume food preparation environment.
  • Demonstrated integrity and professionalism in appearance and conduct.

Education:

  • Red Seal certification is preferred. Please include a copy of your certification with your application.
  • Equivalent combinations of education, training, and experience may be considered.
