**About the Role**

We are seeking a skilled and passionate butcher to join our Delzotto Butchershop in Innifsil. As a butcher, you will play a critical role in preparing, cutting, and presenting high-quality meat products to meet customer needs while adhering to food safety standards. This position requires excellent knife skills, knowledge of various cuts of meat, and a commitment to delivering exceptional service.

**Key Responsibilities**

**Meat Preparation and Cutting**
- Break down carcasses, primal cuts, and large pieces of meat into specific portions, including steaks, roasts, chops, and ground meat.
- Cut, trim, debone, and portion a wide variety of meat products such as beef, pork, lamb, poultry, and occasionally exotic meats.
- Use knives, saws, grinders, and other tools to process and prepare meat for sale.
- Follow specific cutting instructions or recipes for custom orders from customers or chefs.

**Quality Assurance and Product Presentation**
- Inspect meat products for freshness, quality, and appearance, ensuring that only the best products are offered to customers.
- Package, label, and display meat products attractively in the display cases.
- Maintain knowledge of specialty items such as dry-aged, organic, or marinated cuts, and advise customers accordingly.
- Ensure proper portion control and mínimal waste by optimizing cutting techniques.

**Customer Service**
- Greet customers warmly and provide expert advice on meat selection, preparation, cooking methods, and storage.
- Take custom orders and ensure accuracy in meeting customer requests, including special cuts, marinades, and portion sizes.
- Build rapport with customers and foster loyalty through excellent service and product knowledge.

**Food Safety and Hygiene**
- Follow all health and safety regulations, including proper handling, storage, and disposal of meat products.
- Maintain a clean and sanitary workstation, including knives, cutting boards, counters, and equipment.
- Perform regular cleaning of meat processing equipment and adhere to sanitation schedules.
- Monitor and maintain proper refrigeration and storage temperatures for all meat products.

**Inventory and Stock Management**
- Assist in managing inventory by tracking stock levels, monitoring product rotation, and minimizing waste.
- Receive, inspect, and store deliveries of meat and related products, ensuring they meet quality and safety standards.
- Collaborate with the team to plan product displays and manage high-demand periods such as holidays.

**Qualifications and Skills Required**:

- Proven experience as a butcher or meat cutter in a retail, grocery, or processing environment.
- Extensive knowledge of meat cuts, grades, and butchery techniques, including deboning, trimming, and portioning.
- Proficient in the use of butchery tools, including knives, saws, grinders, and scales.
- Strong understanding of food safety regulations and hygiene standards.
- Excellent hand-eye coordination and manual dexterity.

**Preferred**:

- Formal training or certification in butchery, culinary arts, or meat processing is an asset.
- Experience with specialty products such as charcuterie, cured meats, or dry aging.
- Knowledge of international meat preparation styles (e.g., French, Italian, or Japanese cuts).
