**Job purpose**

As the Team Lead, Production & Fulfillment, you will be a working leader responsible for the manufacturing and packaging of Piccola Cucina’s suite of products from raw materials ordering through to finished product shipping. The role is a leadership role as well as a production role, responsible for the scheduling and management of the production team and as well as working in production to ensure product is ready to ship based on customer demand. If you are a hands-on leader with end to end experience in planning and production in the food production industry, then this is the job for you.

**Duties and responsibilities**

**Production Planning & Scheduling**
- Develop the weekly production schedule sufficient to produce to customer orders including a level of inventory to satisfy forecasted demand
- Ensure the daily production schedule is appropriately staffed with production workers to produce, package and ship daily production
- Utilizing Piccola Cucina software platforms (Quickbooks, Nutrasoft), order sufficient ingredients and packaging as required to meet production demands and ensure continuity of supply;
**Production & Packaging**
- Ensure daily production targets are met as required for each product to fulfill customer orders
- Measure and mix ingredients accurately and efficiently
- Weigh and portion dough according to specifications for each product
- Operate equipment safely while maintaining accurate weights/size of product
- Bake and rotate products ensuring the highest quality is achieved
- Package products including bagging, boxing, sealing, labeling
- Maintain a clean and safe working environment including washing equipment, sweeping and mopping
- Employ lean manufacturing techniques to remove waste, improve efficiencies, and reduce cost of production
- Direct the tasks of the production workers as required to ensure production is complete, orders shipped, and production facility is cleaned at the end of each production day and appropriately set up for the next day of production.

**Quality Assurance & Control**
- Quality assure finished product prior to packaging
- Maintain certificate of analysis spec sheets for ingredients, ensuring spec compliance with service standards
- Maintain Kosher certifications/expiry dates on inventory & certifications
- Maintain GMP, HAACP plan and Preventative Control Plan
- Ensure scheduled cleaning is conducted according to plan
- Ensure any changes to the GMP and HACCP plans are recorded and updated as required
- Employ lean manufacturing and maintain high level of quality control

Other duties as assigned

**Qualifications**

Minimum Qualifications:

- 3-5 years experience in food production
- At least 2 years experience as a leader of food production front line workers
- Ability to lift up to 25 kgs
- Ability to stand for up to eight (8) hours per day
- Fluent, written and verbal, in the English language
- A valid, Class 5 drivers license with a clean driving record

Desirable Qualifications:

- Graduate in food related discipline or culinary trade
- Experience with health and safety and HACCP in a food production enviroment
- Proficiency with Quickbooks, Nutrasoft and Microsoft 365 Suite of products
- Food manufacturing experience an asset
- Ability to lead a team with little supervision
- The ability to solve problems quickly and in the best interests of the business

**Working conditions**

This position is Monday through Friday, 40 hours per week and may require some shift, weekend and evening work with fluctuations in business volumes. Production facility is located in Winnipeg.

**Physical requirements**

The incumbent must be able to regularly lift up to 25 kgs and be able to stand for up to eight (8) hours per day.

**Salary**: $20.00-$22.00 per hour

Expected hours: 40 per week
