The Cook prepares and serves assigned food items at the Provincial Assessment Centre in accordance with established menus and recipes by methods/procedures such as roasting, frying, grilling, steaming, poaching, boiling and baking. Modifies and adjusts established menus and recipes in collaboration with the Dietitian. Provides work direction to food services workers, residents and/or volunteers as required. Performs related administrative functions such as monitoring inventory levels, placing food supply orders, checking invoices against orders and goods received, shopping for food items and monitoring kitchen expenses.
**What you’ll do**
- Prepares and serves meals and snacks in accordance with established menus and recipes, by performing duties such as planning food preparation and cooking schedules, cooking, roasting, grilling, baking, testing for palatability, and carving. In collaboration with the Dietitian, provides input to the modification and adjustment of established menus as required. Provides work direction to food services workers, residents and/or volunteers as required.
- Performs administrative duties such as taking inventory and completes food supply order forms; receiving deliveries of stored items and supplies and checks for damage and quality and validates invoices as ordered; storing and distributing deliveries to appropriate areas; and contacting suppliers to obtain and provide information and to investigate invoice anomalies and damaged shipments. Shops for food items and monitors kitchen expenditures.
- Maintains established food rotations in storage in order to minimize spoilage and waste.
- Checks and records food, dishwasher, fridge, and freezer temperatures by inserting and reading thermometers. Advises Clinical Services Manager of discrepancies arising from the actual versus required food and beverage temperatures.
- Cleans items such as dishes, pots, pans and utensils by methods such as washing and scrubbing; loading, unloading and operating dishwasher.
- Maintains work areas such as kitchen, food preparation and storage areas by performing cleaning duties such as sweeping and damp mopping floors; cleaning and sanitizing countertops, tables, sinks, machines and equipment, and spot washing walls and splash areas; and removes garbage as required.
- Monitors functioning of equipment, and reports malfunctions and maintenance and repair requirements to Clinical Services Manager.
- Completes and maintains related records and documentation such as recipes and records of resident preferences, allergies, and special dietary needs.
- May demonstrate to residents the preparation of various food dishes as part of established individual and/or group rehabilitation plans.
- Performs clerical duties such as answering the telephone; documenting food, fridge and dishwasher temperatures, and cleaning audits; and making diet labels.
- Performs inventory control duties such as storing and rotating food and supplies.
- Performs other related duties as assigned.
**What you bring**
**Qualifications**:
- Grade 12 plus two (2) years’ recent, related experience or an equivalent combination of education, training, and experience.
- Professional Cook Training Certificate
- Certificate in Food Safe
- Valid BC Driver’s License. Local area travel requires the use of a personal vehicle for which mileage will be reimbursed.
