Cook (Ft)

**Position Summary**:
Prepares all necessary in-house items as per the Mezza Recipe Book. Maintains a clean and safe work area adhering to food safety and health standards. May occasionally train new hires in the position of prep. Reports directly to Store Manager.

**Tasks and Responsibilities**:

- Prepare and cook meals in accordance with the corporate recipe and procedures.
- Handle raw protein (meat or poultry) and grind meats.
- Prepare food order summaries for the management according to requests from catering clients and customers.
- Maintain records of training, repairs, and maintenance.
- Establish methods to meet teach and streamline training modules.
- Train less experienced staff in job duties, sanitation, and safety procedures.
- Ensure that food and service meet quality control standards.
- Understands and adheres to all quality standards, formulas and procedures as outlined in the Operations Manual.
- Handles and cleans kitchen equipment carefully and safely to prevent damage or injury.
- Prioritizes and organizes tasks for speed and quality assurance.
- Clean kitchen and work areas.

**Required Skills and Experience**:

- Culinary school degree an asset.
- Staff member has his own knives.
- 1-3years of successful, prep cook experience in a restaurant environment.
- Basic math and accounting skills and strong analytical/decision making skills are needed.
- Must be physically able to stand in one place for long periods of time.
- Must be able to lift 10 to 50 pounds frequently.
