**PURPOSE**
The 2nd cook has the skill set allowing the Sous Chef to utilize them to prepare basic stocks, as well as the ability to produce all items from the breakfast, bar, and late night menus. The 2nd Cook is a utility type team member with good basic skills. In charge of all aspects of food production and service in their station, this position also assists with banquet production as needed.
**PRIMARY DUTIES**
- Daily set up, including but not limited to, filling the staff cafeteria buffet with ice and hot water as well as turning on the heat lamps and elements at 10:00 am.
- Assist with preparation of staff meals. Act as liaison between staff cafeteria and chef.
- Clean and organize service coolers daily.
- Make recommendations for maintenance, repair and upkeep of the kitchen equipment.
- Responsible for putting away the daily food requisitions.
- Assist Sous Chef in banquet production and service when required.
- Assist 2nd cook in late night menu preparation and/or rates and favours.
- Maintain prescribed levels of prepared carrots, potatoes, lettuces and onions.
- Assist in any station as deemed necessary by Sous Chef.
- Assist Steward during extreme business levels.
- Follow company policies & procedures as outlined in the Team Member Handbook, and is able to effectively communicate them to other team members
- Understand and work in accordance with health and safety mandates
