Reporting directly to the Community Manager and indirectly to the Technical Advisor, Dining Services, the Chef, provides training/coaching, ordering, program and event planning, coordinates and contributes to the activities of cooks and other kitchen personnel engaged in preparation and cooking foods at Silvera for Seniors.

**Position Requirements**
- Coordinates activities of and directs indoctrination and training of other kitchen workers engaged in preparing and cooking foods at Silvera for Seniors to ensure efficient and profitable food services.
- Plans and collaborates in planning menus and utilization of food surpluses and leftovers, taking into account the number of guests, marketing conditions, popularity of various dishes and recency of menu.
- Estimates food consumption, and purchases or requisitions foodstuffs and kitchen supplies.
- Reviews menus, analyzes recipes, determines food, labor, and overhead costs. Directs food apportionment policy to control costs.
- Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
- Cooks, prepares, and seasons soups, salads, meats, gravies, sauces, vegetables, desserts, and other foods for consumption. Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods. Adds seasoning to foods during mixing or cooking, according to personal judgment and experience.
- Meet regularly with residents and family members to ensure high satisfaction levels are maintained or exceeded.
- Ensure front and back of house employees work in together to deliver a food product that exceeds the residents' and/or guest' expectations.
- Assist kitchen staff with back and front of the house operations as needed, including the ability to work all stations in the kitchen and/or dining room if needed.
- Understand and maintain monthly and annual budgets for the Culinary Services department, including producing written documentation of monthly spend on food, supplies, and labor.
- Responsible for ensuring purchasing standards are maintained and appropriate vendors are used. Maintain strong and positive relationships with all vendors to maintain cost effective pricing.
- Ensure kitchen staff understand company expectations and first impression requirements.
- Assist in planning, preparation and execution of lifestyle, leisure and sales and special events, banquets, and theme meals.
- Responsible for managing and supervise all Culinary Service staff including scheduling, assignment, direction, performance reviews, hiring and corrective action consistent with company policy. Maintain the appropriate inventory of kitchen supplies, small wares, and table ware.
- Demonstrate a strong commitment to building, training, mentoring, and coaching a successful team behind the scenes, while exhibiting a leadership presence on the floor and elevating the guest experience while maximizing profitability.
- Ensure compliance with all food and beverage policies, standards and procedures by training, supervising, and following-up through a hands-on approach.

Typical Functions:

- Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure all food is prepared in prescribed manner.
- Tests cooked foods by tasting and smelling them. Devises special dishes and develops recipes.
- Orients newly hired cooks with practices of Silvera kitchen and oversees training of cook apprentices.
- Maintains time and payroll records. Hires and discharges employees.
- Establishes and enforces nutrition and sanitation standards for Silvera for Seniors.
- May supervise or work in conjunction with Dining Attendants or other kitchen personnel in matters pertaining to kitchen, pantry, and storeroom.
- Adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles.
