Bakery Production Manager

Homestead Artisan Bakery and Café is looking for someone to join our growing team We are looking for someone who is passionate about local food and community.
**POSITION OVERVIEW**
This position supports the baking team as on the Manager each day by overseeing the efficiency and productivity of the production team. They lead by example and problem solve as necessary. This position requires a highly organized individual with basic computer skills for scheduling and evaluating production. The objective of this position is to ensure bakery offerings are being prepared to a high, consistent standard in an efficient and timely manner for storefront retail, custom orders, and wholesale clients. This person keeps the team on task and focused, delegating as needed and supporting the team in solving problems that may arise. You are the point person on the floor each day. You must plan production in advance and maintain a minimum inventory of items while being flexible and adapt to the needs of the bakery as they change throughout the week.
**ADMINISTRATION**
**PLANNING + ORGANIZING PRODUCTION PLAN**: Set production item totals a week in advance, develop and execute bakery production plan and tasks to ensure the plan efficiently covers bakery needs.
- Monitor sales and customer trends to inform production
- Communicate the changing bakery needs and wholesale orders to team
- Update and oversee standard weekly tasks chart
- Print recipes, invoices, and bread charts for the week
- Ensure the team stays on task to complete tasks of weekly plan
**INVENTENTORY**: Manage and track inventory of pastry items in the fridge/freezer. Ensure we do not run out of items before we have time to replenish. Track and communicate ingredient inventory to the General Manager weekly.
**WHOLESALE LEAD **Manage the fulfillment of wholesale client orders daily. Ensure each product that goes out the doors is properly labeled and packaged. Always include the proper Invoice in wholesale customer orders. You are responsible for ensuring all labels, bags and other wholesale materials are prepared each week. Print and prepare labels and manage wholesale specific packaging inventory. Disperse and manage bread as it comes out of the oven between store and wholesale orders. Invoicing and consolidating invoices weekly.
**CLEANING + MAINTENANCE**: Maintain a clean and clutter free work space, monitor the team is also doing this and standards are met. Cleaning and maintenance items added to the production plan: daily, weekly, monthly, per production plan template. Communicate repairs to the Manager and Owners. Ensure all equipment is maintained and cleaned, and serviced accordingly. Flag any equipment issues immediately to the ownership and General Manager.
**QUALITY ASSURANCE**: Accountable for quality control and making sure items that are consistent. Ensure all recipes are stored and easily accessible for bakery production staff. Update and revise recipes as needed.
**DAILY RETAIL INVENTORY**: Take weekly inventory of pastries + other homestead retail items with support of production manager (granola, pancake mix, flour, ect. to manage waste mitigation. Adjust and manage the daily pastry pull to mitigate waste and overproduction of items. Delegate and train employees when required with supervision.
**TEAM MANAGEMENT**
**TEAM PERFORMANCE**: Train new team members and ensure all production staff are producing products with consistency, correct and inconsistencies. Monitor the bake to ensure the product is consistent with bakery standards noting bake consistency and shape. Monitor the mix to ensure breads and pastries are consistently up to standard. Monitor wholesale to ensure orders are packaged and fulfilled correctly. Monitor Dough scaling and shaping to ensure dough is being handled correctly. Monitor the pastry pull to ensure items are being trayed and pulled correctly.
**SCHEDULING**: Ensure all team members availability is up to date in 7shifts and review posted schedules weekly to ensure adequate department coverage. You are responsible for ensuring shift coverage in case of absence.
**COMMUNICATION WITH and FROM MANAGEMENT**: Operate as liaison between management and production team. Ensure you are communicating important information to the team such as policy changes, meetings reminders, customer feedback, etc. Work closely with other department managers to ensure the whole team is working together towards the same common goal.
**COMMUNICATION WITHIN PRODUCTION**:Communicate and work collaboratively with the production team to mentor and ensure high standards are maintained. Communicate open feedback, concerns, issues with General Manager. Ensure the production team is up to date with relevant information.
**COMMUNICATION WITH OTHER DEPARTMENTS**: regarding changes, shortages, specials, holiday features, quantity needs. Follow up with FOH manager to monitor sales and customer trends, waste overage, or sell out early. Monitor
