We are seeking a **Distillery Brewer**:Mashing & Fermentation Specialist** to take responsibility for the grain mashing process and oversee the critical transition into fermentation. This role is a cornerstone of our production process, ensuring the quality and consistency of our spirits from the very beginning of the distillation journey.

**Job Summary**:
As a **Distillery Brewer**, you will be responsible for preparing and cooking the grains, monitoring the mash, and managing the fermentation process that follows. You will carefully execute mash recipes, maintain strict control over temperatures, enzyme use, and fermentation times to ensure a consistent and high-quality end product. Your role is essential in creating the fermentable base that drives the flavor and character of our spirits.

Working in a small distillery, you’ll also collaborate with the distillation team, playing an active role across various stages of production, from mash to finished spirit.

**Key Responsibilities**:

- **Grain Milling & Mashing**:

- Measure and mill grains according to recipe specifications, ensuring proper grind consistency and quality.
- Execute the mashing process, including water mixing, temperature control, and timing, to ensure optimal sugar extraction from the grains.
- Monitor mash conditions and adjust as necessary to maintain consistency and meet quality standards.
- **Fermentation Management**:

- Transfer mash into fermentation vessels and manage the fermentation process, including monitoring pH levels, temperature, yeast activity, and fermentation times.
- Ensure optimal yeast health by managing nutrient additions and oxygen levels during fermentation.
- Track fermentation progress and troubleshoot issues to ensure the best possible yield and flavor development.
- **Recipe & Process Control**:

- Follow specific mash bills and fermentation protocols for different spirits, ensuring batch-to-batch consistency.
- Keep detailed records of mashing and fermentation data, including temperature, pH, yeast, and any deviations from the recipe.
- **Quality Assurance**:

- Conduct visual, sensory, and analytical tests on both mash and fermentation to ensure quality at each stage.
- Identify and resolve potential problems early in the process to maintain product quality.
- **Equipment Maintenance**:

- Clean and maintain mash tuns, fermenters, and related equipment to ensure operational readiness.
- Perform routine checks and maintenance to minimize downtime and ensure safety and hygiene standards are met.
- **Cross-functional Collaboration**:

- Work closely with the distillation team to coordinate the handoff from fermentation to distillation.
- Participate in production planning meetings and assist with distillation tasks as needed, providing input on mash and fermentation performance.
- Collaborate with restaurant, event, and sales teams in giving our customers exceptional service and experiences wherever the brands are represented.
- Be available when asked to work at functions outside of the distillery that include trade shows, and industry events and gatherings.

**Skills & Qualifications**:

- Prior experience in distilling, brewing, or related food production is preferred, with specific experience in grain mashing and fermentation processes being highly beneficial.
- Strong understanding of yeast management, fermentation science, and temperature/pH control.
- Attention to detail with the ability to execute precise instructions and maintain batch consistency.
- Physical ability to perform tasks that include lifting up to 50 lbs and standing for long periods.
- Problem-solving skills to troubleshoot issues with the milling, mashing and fermentation process or equipment.
- Passion for craft spirits and an eagerness to learn and contribute across all areas of production.
- Flexibility to assist in other production tasks beyond mashing and fermentation, as needed.
