Bingemans is in the business of providing Grand Experiences
**What will you be doing?**
- In charge of the kitchen in the absence of the Executive Chef
- Meet daily with Executive Chef to communicate daily operational challenges and successes
- Facilitate daily culinary communication line-ups
- Ensure all colleagues are aware of standards and expectations, and are being consistently adhered to daily
- Work with the Executive Chef on initiatives to achieve and surpass budgetary targets and promotions
- Promote a fun, productive and disciplined work environment
- Administer progressive disciplinary actions when required
- Engage front of the house and other departments to maintain positive relationships and teamwork
- Lead by example and promote Bingemans mission, vision, and values
- Support, coach, lead, and motivate culinary department colleagues
- Administer professional development sessions with the culinary department colleagues when required
- Facilitate monthly culinary communication meetings
- Actively share ideas, opinions and suggestions at daily briefings and monthly meetings
- Ensure adequate scheduling coverage of all kitchen colleagues is maintained based on fluctuating business levels while considering productivity targets and quality standards
- Ensure that proper grooming and hygiene policies are being met on a consistent basis with all colleagues
- Ensure that food safety standards are being met to comply with local health region guidelines
- Ensure a safe work environment and compliance with Bingemans and Ontario Health and Safety Guidelines
- Develop recruiting plans for culinary colleagues when required
- Ensure culinary department orientation checklists are completed for new colleagues
- Strive to improve food preparation systems, presentation, and menu selections by working with the Executive Chef on menu development and strategic planning
- Assist with the development of departmental food specifications and recipes
- Collaborate with the kitchen manager to complete tri-weekly food orders while adhering to budget guidelines for food purchases
- Oversee food production to reduce food expenses; overproduction, food waste, proper rotation, labelling and storing
- Ensure quality and par levels of food and paper products are maintained
- Ensure all janitorial supplies are maintained and properly stocked
- Actively walk the floor to ensure all production and execution adheres to Bingemans standards of performance and departmental guidelines
- Ensure that quarterly small wares purchase requests are completed and forwarded to the Executive Chef
- Perform any other reasonable duties as required and requested
**What we're looking for?**
- Minimum of 5 years progressive leadership experience in a similar environment
- Must be highly resourceful, detail oriented, quality conscious and demonstrate a real passion for the Culinary Arts
- Must have highly developed communication and interpersonal skills
- Must be able to work flexible shifts, weekends, and all major holidays
- Baking and Pastry skills are an asset
- Valid Food Safe Certificate required
- Journeyman Papers, Red Seal, or equivalents
- Must be WHMIS certified
- Proficient with administrative duties
- Must be willing to prepare food as part of the interview process if required
- Must be able to lift and transport up to 50 pounds
- Must be able to stand for long periods of time (for up to and more than 8 hours)
- Must be able to work in both, hot and cold (fridge/freezer) environments
