**General Position Description**:
The Meat Cutter will maintain, properly store their assigned area with a solid knowledge of different types of meat, seafood and pork cuts, being able to operate a variety of meat slicers to prepare meat products for customers retailers.

**Key Responsibilities**:

- Knowledge about handling different cuts of meat, seafood, pork and lamb.
- Manage the following **meat** primals:

- Flank
- Striploin
- Sirloin Tip
- Top Sirloin
- Eye of Round
- Inside Round
- Chuck Roll (Blade)
- Manage the following **seafood** primals:

- Salmon
- Rainbow Trout
- Tilapia
- Manage the following **pork** primals:

- Boneless Loins
- Bone In Loin
- Side Ribs
- Back Ribs
- Tenderloin
- Responsible of receiving, storing and cutting different meat, ensuring the quality complies with Company standards.
- To store meat, seafood, pork and lamb on trays in an orderly fashion in preparation for wrapping;
- To ensure that the safety and sanitation of the department meet with Company policies and standards;
- To perform other duties, as assigned.

**General Requirements**:

- Helps receive meat, pork and seafood performing a high quality inspections on the products.
- Cutting, grinding, and preparing the various meat cuts at requires (Meat, pork and seafood).
- Cleaning and maintaining tools and equipment and ensuring displays and signage are accurate and attractive
- Following proper procedures for; Ordering, clearance, markups/markdowns, signing/flagging, pricing, labels, weighing and packaging.
- Fulfilling special orders.
- Rotating stock and checking for expired products.
- Ensuring the merchandise is properly signed and priced.
- Adhering to standards and policies for cold chain compliance, thermometer calibrations, temperature recording, food handling, product rotation, sell-by dates, and expiration dates.
- Taking orders for Deli and Salad merchandise; slicing and preparing merchandise, such as fruit or cheese providing requested assistance.
- Following Health and Safety guidelines.

**Knowledge, skills and work experience requirements**:

- Minimum 3 years' experience cutting meat, seafood and pork in a retail meat environment.
- Knife experience an asset
- Food preparation experience an asset
- Experience using the following machines:

- Meat slicer
- Brandsaw machine
- Vacuum machine
- Experience in Deli and Salad bar
- Able to lift up to 50lbs unassisted
- Work well under pressure
- Excellent organization and cleanliness
- Strong communication skills
- Maintain a safe and clean environment, observing all food safety rules, regulations and company standards
- ** Role Purpose**:
Responsible for safe, secure, and accurate filling of customer orders. Replenish or pick product with direction from pick sheets or hand held computer. Obtains merchandise from bins or shelves to fill the order.

**Key Accountabilities**:

- Efficiently pick customer orders or shipment insuring the correct number and type of product is loaded and shipped.
- Accurately count product inventory by location.
- Transport orders to shipping locations utilizing non-powered material handling equipment.
- Assist in physical inventories.
- Maintain a clean, neat, orderly, and safe work area.

**Required Education and Experience**:

- High School Diploma or Equivalent, preferred
- 0 to 12 months experience in a warehouse setting, preferred
