**CHEF DE PARTIE**

Under the general guidance of the Executive Chef, the Chef de Partie must be able to supervise, train and direct all culinary staff in order to prepare, cook and present food according to hotel standards.

**RESPONSIBILITIES**:

- As this is a supervisory role one must work closely with the kitchen staff as well as the front of the house staff in a respectful manner being able to resolve questions and concerns in a professional manner.
- Prepare all aspects of the food production for Banquets according to hotel standards and sanitation practices.
- Prepare food items for customers using a quality pre-determined method in a timely and consistent manner with the minimum of wastage possible.
- Daily cleaning and inventory of walk in, storage and refrigerators for stock rotation and cleanliness.
- Ensure all equipment in work area is properly cleaned after every use.
- Report any equipment in need of repair to Chef immediately.
- Documentation of walk-in fridge temperatures on a daily basis.
- Train junior staff members on all kitchen practices and procedures.
- Must be aware of current food trends with regard to presentation and style to help with new menu ideas and menu design.
- Input on menu development is required.
- Must be well organized, able to multitask and work independently as well.
- Produce menu tastings as well as VIP functions on regular basis.
- Checking quality and receiving goods, making sure they are stored in the proper manner.
- Working with suppliers and venders, food cost, and labor cost management.
- Must be able to discipline staff in an unbiased nature when necessary
- Conducting performance reviews on junior team members.
- Perform other duties as necessary and assigned by Chef.

**QUALIFICATIONS**:

- Interprovincial Red Seal Certification mandatory
- Must be Food Safe Certified
- Ability to obtain and or maintain any provincial and federal licenses, certificates and permits.
- Required to have a minimum of five years of experience in comparable 4 diamond hotels or restaurants.
- Completion of a recognized culinary program
- Must be able to speak, read, write and understand English, strong knowledge of French cuisine is required
- Due to the cyclical nature of the industry, employee will be required to work varying shifts and times due to the needs of the business within the hotel.
- Must have strong communication skills, both verbal and written.
- Strong knowledge and cooking techniques of local and international cuisine is required
- A neat, clean and well-groomed appearance as per hotel standards.
- Excellent health is necessity as this position is mentally and physically demanding
- Must be able to lift/carry up to 20-25kg
