Duties
- Develop a detailed menu plan for each shift, encompassing a diverse range of foods while accommodating specific dietary restrictions.
- Excecute hot breakfast and dinner for a 50 person camp and provide to go lunch options daily.
- Implement weekly food orders based on the menu plan, ensuring compliance with budget constraints, and liaise with food suppliers (Sysco or GFS).
- Coordinate delivery schedules with the Project Coordinator to facilitate timely receipt, managing logistics for supplier truck arrivals.
- Safeguard food integrity by securely sealing and appropriately storing items in ranger tents, fridges, and freezers, while actively preventing pest infestations and addressing any issues.
- Monitor and maintain proper temperature levels in fridges and freezers, utilizing thermometers for accuracy.
- Strategically manage food supplies to minimize waste and spoilage, adhering to the First In, First Out Food Safe procedure.
- Delegate tasks to the assistant cook to help with daily menus.
Experience
- Previous experience in a leadership role within the food service or food industry is required.
- Strong knowledge of meal preparation, food safety, and kitchen operations.
- Experience with food handling and preparation techniques.
- Familiarity with restaurant operations is preferred.
- Excellent organizational and communication skills.
- Ability to work in a fast-paced environment and handle multiple priorities.
