As Western Canadas premier remote camp and catering company we provide catering and hospitality solutions for small camps consisting of just a few clients to major camp projects necessitating hundreds of clients.
Reporting to the Chef, a Chef Trainee plays an integral role within Royal Camp Services ltd by ensuring our clients are delivered an exceptional culinary experience. A Chef Trainee is responsible for the food safety and quality of food prepared within their assigned lodge.
**Job duties include but are not limited to**:
- Demonstrate mastery of all cooking techniques
- Under guidance of the Chef overall responsibility for the kitchen including but not limited to managing staff, maintaining equipment, ensuring food quality, and exceeding food safety standards
- Accommodate various diets including vegetarian, vegan, cultural, food allergies, and other specific requests
- Bake basic breads and desserts
- Supervise, manage, mentor, train, evaluate, and direct kitchen staff as appropriate to their position
- Maintain client satisfaction by handling customer complaints in a professional manner
- Conduct handover with Relief Chef and Night Shift Supervisor to ensure communication flow
- Complete staff schedules and product orders for head office within a timely manner
- Adhere to the cyclic menu system while working within budget by controlling expenditure
- Ensure staff comply with the Food Safety Program (FSP) via daily documentation review and spot checks
- Conduct a monthly Food Safety Program (FSP) audit with the Camp Manager to ensure compliance
- Ensure all daily, weekly and monthly cleaning tasks are completed
- Conduct toolbox safety meetings in accordance with Royal Camp Services policy
- Ensure that Field Level Hazard Assessment and Hazard Identifications are completed by all staff on shift
**Requirements**:
- Red Seal Cook designation an asset
- At least 5 years of relevant experience cooking for groups of 200-1000 persons
- Successfully complete training and skill evaluation during first 1-3 rotations as a 1st Cook
- Available to work multiple rotations including but not limited to 21-7, 10-4, 9-5, and 14-7
- Available to work a day shift, afternoon shift, split shift, or night shift
- A valid Alberta Health Services recognized Food Safety Certificate and Standard First Aid Certificate required
- Must supply your own transportation to our camp transfer site located in Edmonton or Grande Prairie
- Strong interpersonal and communication skills (including reading, writing, and speaking English)
- Be able to lift/move up to 25lbs throughout a work shift
- Misc. safety requirements based upon position and site standards
