**ABOUT ADVENT HEALTH**

Advent Health Care is a not-for-profit, charitable organization affiliated with the Seventh-day Adventist Church and is led by a volunteer board of directors. Advent Health Care currently serves the needs of the community with the operation of Valleyview Residence, a 174-bed long-term care home and Forestview Retirement Residence, an a 128-suite independent and assisted-living residence.

**ACOUNTABILITY OBJECTIVE**

Reporting directly to the Food Service Manager, Cook 1 is responsible for all phases of food production following standards for sanitation, safe food preparation and therapeutic diet and texture modifications. Cook 1 follows recipes for regular, texture modification and therapeutic diets. Cook 1 follows proper operation of all equipment used for food preparation and instructs Dietary Aides as required.

**BACKGROUND/QUALIFICATIONS**
- Must have a chef training or culinary management diploma from a program that meets the standard established by the Ministry of Training, Colleges and Universities. Certified Red Seal preferred.
- A valid Food Handler’s Certificate.
- A valid Employment Vulnerable Persons Police Reference Check within 6 months.
- Experience in large quantity food preparation and cooking in Health, Long Term Care, or Retirement Residence is preferred.
- Able to work independently to produce an entire meal including all therapeutic and texture variation and able to work as part of a team.
- Knowledge of operation and sanitation of commercial cooking equipment.
- Good organizational and time management skills.
- Demonstrates a positive attitude necessary to meet the goals and able to provide good customer service; resident-focused

**KEY RESPONSIBILITIES**
- Prepares foods for residents in accordance with sanitation and safety regulations, the menu, and methods best suited for the nutritional quality and appearance of the product.
- Participates in and contributes to the Quality Improvement (QI) activities.
- Directs and trains staff involved with food preparation area and equipment.
- Purchases assigned products, receives, stores and controls food products under the direction of the Food Services Manager. This would include portion control, forecasting, production requirements, evaluation of bulk leftovers and plate waste evaluation.
- Follows HACCP principles in food preparation, monitors, and records food temperatures for hazardous items.
- “In-charge” responsibilities (Cook I and Cook II) on weekends and statutory holidays; This involves handling all issues/concerns that arise in the department and contacting the supervisor/manager, if support is needed
- Prepares foods for special functions.
- Participates in educational in-services and staff meetings as required.
- Participates in fire drills and fire safety.
- Complies with Occupational health and Safety Insurance Act and WHMIS information system. This includes recognizing health and safety hazards, reporting incidents, fulfilling responsibilities under the applicable legislation, as well as participating in in-services and fire drills.
- Weekend and shift work are required.
- Performs other duties as assigned.
