About the opportunity:


The Senior Technical Cheese Specialist utilizes specialized science and dairy industry knowledge to optimize the manufacturing of cheese, process cheese, and ingredients. The Specialist participates in the commissioning and start-up of new projects/ formulations/product development. 2 persons will report to this role.


The attributes we are looking for:


  • Provide supervision to cheese makers and operators by providing daily work direction to optimize cheese yield and losses reduction.
  • Oversee the diverse line of cheese products with respect to their processing, raw materials, and quality parameters to meet the customers’ needs by monitoring the overall cheese quality/grading and the cheese/product make process and providing technical direction to improve or correct product quality and parameters.
  • Evaluate and implement new ideas in cheese and milk ingredient. Develop appropriate technical solutions for Dairy Food Group (DFG) by involving scientific fields to grow commercial sales of Lactalis's product portfolio through cost reduction quality improvement.
  • Participate in project design; ensure appropriate information of experimental trials and outcomes to facilitate scale up. Execute testing and trial for identified new projects in collaboration with Research & Development department and Technical team. Liaise with R & D / Technical groups and plant management on cheese technology project implementation.
  • In collaboration with DFG and R&D optimize the cost-effective use of off-specification materials in process cheese products.
  • Support Continuous improvement (CI) and return on investment (ROI) projects by providing technical support, generating reports to track progress, and providing follow up.
  • Manage cheese technology projects incorporating ingredients for yield maximization and cost efficiency cheese operation.
  • Identify and implement internal continuous improvement (CI) initiatives as well as R&D and company-wide CI initiatives, and communicates status of projects


What you will bring


  • Bachelor of Science (Food and Dairy Science major preferred) or equivalent combination of college education and work experience.
  • Five (5) years experience in the dairy industry, including a strong cheese technical and processing background.
  • Knowledge of product development.
  • Strong analytical, problem solving and decision-making skills.
  • Effective verbal and written communication skills coupled with strong interpersonal skills.
  • Understanding of food ingredient technology and food regulations.
  • Proficient with standard office computer technology such as Lotus Notes (asset) and Microsoft Office products.
  • Bilingual French and English, an asset.
