Executive Chef:
Our Chefs are responsible for overseeing all kitchen operations, and more specifically:

Attributes

  • Leads & motivates those around him/her
  • Serves consistently excellent food to our exact specifications and within our required bill times
  • Cooks on line, working various stations and is comfortable talking with our guests out on the floors
  • Supervises food safety through set guidelines and maintains the highest of standards in all areas
  • Manages food, labour and all other kitchenrelated costs
  • Oversees inventory & ordering, tracking total purchases, meeting budget targets and conducting food cost analysis
  • Manages prep inventory and audits, reviews counts, and ensures quality
  • Supervises menu rollouts and product updates, including training and quality control
  • Recruits' quality culinary professionals, using effective hiring methods, and is always promoting continuous hiring
  • Communicates kitchen standards to the FOH staff
  • Provides creative input, people evaluations and menu feedback to HO
  • Handles pressure well in a highly paced and professional atmosphere
  • Is well organized with excellent multitasking and delegation skills
  • Demonstrates a professional attitude and fosters a fun & positive working environment
  • Is committed to the professional development of all kitchen staff
  • Ensures superior levels of customer service and is committed to ensuring a Fanatical Customer Experience each and every time

Sous Chef:
The Sous Chef supports the Chef in maintaining and executing the highest food quality & standards

Attributes

  • Is available on a daily basis to coach staff on systems and standards of kitchen operations
  • Upholds CHG's standards of cleanliness, timing, uniform, grooming, food quality and consistency
  • Supports achievements of budgets in area of kitchen: food cost, labour and fixed costs
  • Accurately maintains inventory
  • Oversees the quality of all food products and monitors daily prep production of food
  • Trains all kitchen positions, systems and proper use and care of equipment
  • Provides professional development for kitchen staff
  • Excellent planning and analytical skills
  • Communicates effectively and clearly, both written and oral Possesses a strong ability to motivate a team
  • Takes initiative and is able to work independently
  • Prioritizes and manages time effectively
  • Promotes a teamwork first attitude among staff
