Job Description

The Senior Steward's primary responsibility is to ensure the smooth operation of the Stewarding department by training, coaching, and motivating stewarding colleagues while performing stewarding duties. As well as ensuring the cleanliness and organization of the entire F&B heart of house, participating in Food Safety Audits, supporting all CSR initiatives, conducting small wares inventory, and equipment deficiency reporting.

What you will be doing:

  • The Senior Steward must be available to work all shifts as dictated by business volume, early mornings, mid shifts, and late nights.
  • Trains, coaches, and motivates all stewarding staff to perform to above standards as per Chief Steward's direction.
  • Demonstrates Fairmont's Service Plus Standards and Values in all interactions.
  • Ensures adherence to Fairmont Hotels & Resorts Code of Ethics and Grooming Policy.
  • Promotes positive guest relations; Anticipates guest needs, responds promptly and acknowledges all guests at all times.
  • Maintains operational hands on presence, along with Sous Chefs, during peak business periods ensuring close, effective cooperation between Stewarding and other departments on site or at outside catering venues.
  • Ensure daily functions are set up in advance.
  • Maintain accurate inventories of China, Glassware, Flatware by doing quarterly inventories.
  • Actively promotes a safe and hazard free work environment.
  • Monitors and ensures that all temperature and chemical solution requirements are met/identify dishwashing machine problems by inspecting washed wares: resolve problems and situations. (recording of all relevant Food Safety data)
  • Maintains established standards for a clean and organized back of the house area, conducting daily walkthroughs of the entire food & beverage area, checking cleaning schedules.
  • Maintain all Stewarding chemical par stocks with biweekly inventory.
  • Lead and support a preventative maintenance program by identifying and reducing high breakage /loss items through colleague awareness and ownership.
  • Adhere to and promotes the hotels environmental policies and procedures.
  • Adheres to and promotes the hotels Health & Safety standards and ensures that safe work practices are followed at all times.
  • Support the F&B division in other duties as assigned by Chief Steward or Executive Chef.
Qualifications
  • Minimum of 2 years experience in a leadership position.
  • Basic knowledge of kitchen and food service operations.
  • Degree or diploma in Hospitality/Hotel Management is an asset.
  • Proven ability to successfully lead, train and motivate colleagues.
  • Ability to multi-task and work under pressure in a fast paced and consistently changing environment.
  • Highly organized, career and result orientated, with the ability to be flexible with schedule, assignment and additional duties.
  • Proficiency in English language, verbal and written, and interpersonal communication skills. Second language is an asset.
  • Computer literacy with MS Office (Word/Excel)
  • Professional presentation.
