The Role: Sous-Chef, Operations
We are seeking a Sous-Chef to help lead our back-of-house team and deliver the quality, consistency, and creativity that keeps our guests coming back. This position reports directly to the Chef and General Manager and plays a critical role in the daily operation of our kitchen.
What You'll Do
Lead, manage, and hold your BOH team accountable (8–12 staff including line cooks, prep cooks, and dishwashers).
Oversee food quality, rotation, safety, and cleanliness.
Mentor and train new staff, ensuring 90%+ training completion on Spiffy our online training platform.
Control labour costs (direct responsibility for $330,000 annually) and contribute to food cost management ($600,000).
Contribute to menu development, features, and group event menus.
Create and manage schedules, staff training, and performance feedback when needed.
Ensure compliance with all regulatory bodies (Health & Safety, Ontario Government, LCBO).
Uphold Palasad's culture of positivity, teamwork, and high standards.
What We're Looking For
Minimum Grade 12 education; Culinary training or Red Seal certification preferred.
2+ years experience as a Sous-Chef in a full-service kitchen.
Food Handler & WHMIS certification required; JHSC certification an asset.
Knowledge of buffets, catering, and large group food preparation is an advantage.
Strong organizational, leadership, and communication skills.
Ability to coach, delegate, and motivate staff to create thrilled guest experiences.
Physically able to handle the demands of a fast-paced kitchen environment (lifting, cleaning, standing for long periods).
Flexibility to work evenings, weekends, and holidays as required by the business.

- Total compensation including profit sharing + event gratuities $55-60/yr.
