Job description:
The Head Chef at the private, Orchard House Preschool plays a central role in our Gourmet Kitchen.
The Head Chef plans and prepares daily balanced meals in accordance with Canada's Food Guide for approximately 140 children (ages 6 months to 5 years) and 40 staff members.
The Head Chef works in close collaboration with a Sous-Chef.
Minimum Qualifications & Skills:
o Diploma of Vocational Studies (DVS or DEP) in Professional Cooking or an equivalent credential.
o MAPAQ food handler certification (or willingness to obtain).
o Proven experience in large-scale cooking (school, daycare, catering, or similar environment).
o Strong understanding of nutrition for young children.
o Creativity in menu planning and passion for preparing fresh, whole foods.
o Ability to work efficiently, independently, and collaboratively with a Sous Chef, preschool director and educators.

Key Responsibilities:
Meal Planning
o Develop varied and nutritionally-balanced monthly menus following Canada's Food Guide.
o Prepare and post the monthly menu.
o Adapt daily menus or prepare specific meals to accommodate allergies & dietary restrictions.
Meal & Snack Preparation
o Organize the workday and complete required prep work (mise en place).
o Prepare and cook selected recipes.
o Portion, distribute, and serve meals and snacks.
Purchasing & Food Storage
o Plan purchases according to the menu and allocated budget.
o Communicate with suppliers and place orders.
o Store food items properly and ensure stock rotation according to hygiene, safety, and food preservation standards.
Maintenance and Cleaning
o Wash and store all dishes, utensils, kitchen equipment, and work areas in line with MAPAQ food safety standards.
Other Related Duties
o Perform any other related tasks as required.

Description du poste:

Conditions minimales d'admission:

o Certification de manipulation sécuritaire des aliments (MAPAQ) ou volonté de l'obtenir.
o Expérience avérée en cuisine à grande échelle (écoles, garderies, traiteur ou milieu similaire).
o Bonne connaissance de la nutrition des jeunes enfants.
o Créativité dans la planification des menus et passion pour la préparation d'aliments frais et complets.
o Capacité à travailler de manière efficace, autonome et en collaboration avec le/ la Sous-Chef, la direction et les éducateurs.

Responsabilités principales:
Planification des repas
o Élaborer des menus mensuels variés et équilibrés selon le Guide alimentaire canadien.
o Préparer et afficher le menu mensuel.
o Adapter les menus quotidiens pour accommoder allergies et restrictions alimentaires.
Préparation des repas et collations
o Organiser la journée de travail et faire sa mise en place.
o Préparer et cuisiner les recettes sélectionnées.
o Répartir les portions des repas et des collations, les distribuer et les servir.
Achat et entreposage des aliments
o Planifier les achats selon le menu et le budget alloué.
o Communiquer avec les fournisseurs et passer les commandes.
o Ranger les aliments et assurer la rotation des stocks conformément aux normes d'hygiène,de salubrité et de conservation alimentaire.
Entretien et nettoyage
o Nettoyer et ranger toute la vaisselle, les ustensiles, les équipement et les surfaces de travail selon les normes de sécurité alimentaire de la MAPAQ.

o Effectuer toute autre tâche connexe.
