About us

Istanbul Doner is a busy downtown shop serving authentic doner, kebabs and traditional Turkish dishes. We are looking for a skilled, reliable cook who can work the doner station and prepare a range of hot dishes with consistency and care.

What you will do

  • Prepare and set up beef and chicken doner cones, build and secure the doner stack, and operate the rotisserie safely
  • Skillfully slice doner to order for wraps, plates and bowls
  • Season and time doner and other proteins so each service is consistent and delicious
  • Prepare soups and a variety of Turkish dishes including mixed grills, Adana kebab, chicken kebab, lamb dishes and other hot items
  • Skewer and prepare meats for grilling
  • Make traditional desserts such as kanafeh when required
  • Follow recipes and portion controls to minimise waste and maintain food cost targets
  • Keep work area clean and organised and follow food safety and sanitation procedures
  • Assist with stock rotation, basic prep and daily set up
  • Train under the head chef and step into the cook role as skills develop

What we are looking for

  • Previous experience working with doner or vertical rotisserie is strongly preferred
  • Strong knife skills and experience building and slicing doner cones
  • Experience cooking Turkish or Middle Eastern cuisine is an asset
  • Comfortable with high volume service and working a busy line
  • Knowledge of food safety and safe handling practices. FoodSafe or equivalent is preferred
  • Reliable, punctual and able to work flexible shifts including evenings and weekends
  • Ability to lift and handle heavy meat cones and stand for long periods
  • Team player with a positive attitude and willingness to learn
