Job purpose

To transform Gluten Free ingredients into a cohesive, extensible, machinable dough that can be sheeted or laminated into a continuous sheet prior cutting.

Duties and Responsibilities

The associate's primary functions and responsibilities are as follows:

  • Operate mixing equipment and weighing scale.
  • Organize and prepare items carefully to be measured.
  • Weigh multiple ingredients to ensure they are portioned correctly and meet safe usage requirements.
  • Record weight and composition of various ingredients accurately, taking care not to make mistakes.
  • Conduct scaling and loading of ingredients into mixers and ingredient bins.
  • Transfer weighed ingredients to the dry mixer for processing.
  • Follow dough formulation and adds ingredients as specified.
  • Perform required dough checks.
  • Perform cleaning of machinery and Weighing room during the changeover in a timely manner according with the GF SOP's
  • Communicate any issues with Mixing Leader, Exact Mixer operator, Sheeter, and Oven operator. Escalate issues to the Line Supervisor.
  • Follow FIFO and communicate with Line Supervisor and Mixing Lead for ingredient needs.
  • Update metric board
  • Ensure work area is maintained in a clean, sanitary, and orderly state always. This also applies during shift and prior to the start of the following shift.
  • Follow all Gluten Free SOP's including daily pre-op procedures and formulas, record keeping.
  • Perform other assigned duties.
  • Follow all Gluten Free SOP's.
  • Follow Health and Safety rules and regulations.
  • Must follow Good Manufacturing Practices, Food Safety, and Food Defense guidelines.
  • Comply with all Company policies and procedures.

Working conditions

  • Work indoors.
  • May be exposed to hot temperatures from ovens.
  • May work close to others, usually within a few feet.
  • Compliant with ventilation, cleanliness, space, lighting, and temperature.

Physical requirements

  • Standing involved.
  • May repeat the same movement.
  • Often wear safety equipment such as gloves, hair nets, steel toed safety shoes/boots and beard nets.
  • Ability to bend or twist their body.
  • Must be able to lift up to 50lbs.
