Under the direction of the Food Services Manager, the purpose of this position is to support food services staff in the successful operation of the Provincial Correctional Centre kitchen. The incumbent supports Cooks and the Food Services Manager in food preparation, service/distribution, receiving, rotating and storing chemicals and food ingredients as well as maintaining food safety and cleanliness of kitchen equipment, food handling areas, dry storages, fridges/freezers, and the kitchen environment in general.
Duties will include but are not limited to:
- Prepares or assists in the pre-preparation of a vegetables under the direction of kitchen staff and in accordance with departmental work production standards and standardized recipes;
- Assists in food distribution to offenders in all units at the direction of Cooks and the Food Services Manager;
- Assembles daily portions of condiments for all inmates in the facility;
- Operating an industrial dishwashing machine and a three-compartment sink, maintain Occupational Health & Safety guidelines and departmental safety and sanitation codes;
- Cleaning and sanitizing plastic food trays / pots / pans / cutlery and other kitchen equipment;
- Ensures daily cleaning tasks are completed according to Occupational Health and Safety guidelines and department safety and sanitation codes;
- Adherence to all safe work practices and procedures, following occupational heath and safety guidelines and applicable safety and sanitation codes;
- Ensures that kitchen equipment and work areas are cleaned and sanitized following each meal;
- Receives, rotates and stores chemicals and food ingredients ensuring security protocols are followed;
- Maintain cleanliness in dry storages, fridges and freezers;
- Updates nutrition services communication book with all necessary information;
- Other duties as required.
Minimum Qualifications:
- Successfully Completed Grade 12;
- Demonstrated ability to work with minimal supervision;
- Ability to effectively understand and follow oral and written instruction;
- Capable of performing sustained physical activity (lifting up to 50 lbs.);
- Satisfactory criminal record check;
- Food Safety & Sanitation Certificate;
- WHIMIS Training;
- Current First Aid/CPR certificate;
- Satisfactory references and a satisfactory criminal records check is required prior to employment.
Other Qualifications:
- Knowledge of public health standards/regulations and Occupational Health and Safety standards;
- Experience in a kitchen setting;
