OUR ROLE
We are in search of a dynamic and creative Executive Sous Chef, responsible for assisting the Executive or Head Chef with all aspects of managing the kitchen and kitchen associates, ensuring quality preparation and presentation of all menu items and proper handling / storage of all food items in accordance with hotel standards and sanitation/health regulations. Coordinating the purchase of all food, developing menus, calculating monthly transfers, and maintaining approved food and labor costs will be expected deliverables.
Key accountabilities include:
Consistently providing the highest quality of service to our guests and associates alike, setting a shining example for our team.
Responsible for the kitchen in the Chef's absence.
Manage associate schedules in line with business forecasts and payroll budgets, monitoring timekeeping to manage labour costs.
Monitor and track daily consumption and waste to manage food costs, using standard recipes and portion control to minimize waste.
Direct the efficient use of leftovers, training associates on preparation techniques that utilize trimmings.
Review performance of the culinary team and provide feedback to encourage accountability and a zero-waste mindset.
Prepare production lists and assist with maintaining menu specifications and files.
Oversee all cooking operations for hotel functions, establishing preparation methods and portioning standards.
Maintain physical working conditions, including kitchen tools and equipment.
Maintain the consistent quality of our offerings by testing products and refining delivery methods.
Monitor guest satisfaction, auditing food offerings, and fostering an environment of continuous improvement.
Ensure the highest level of associate satisfaction by assisting with the selecting, training, scheduling, coaching, counseling, developing, recognizing and rewarding our associates.
Provide exceptional instruction to cooks in preparation, cooking, garnishing and presentation of menu items.
Ensure adherence to all Concord Hospitality policies and SOPs.
Promote a culture of accountability, excellence, and continuous improvement.
Follow all safety and security policies and procedures, report accidents, injuries, and unsafe work conditions.
YOUR STORY
A Red-Seal certified, seasoned professional with a flair for innovation, possessing a minimum of two years' experience helping to lead a kitchen in an upscale Restaurant operation in a downtown city center.
Someone with an outstanding work ethic, along with a track record of reliability, punctuality and an approachable demeanor, with a strong commitment to safety.
Someone who has solid leadership skills, adept at training, coaching and motivating a team of culinary professionals, passionate about helping them develop technique and artistry.
An exceptional problem-solver, knowing how to troubleshoot, resolve situations efficiently, with the ability to shift priorities as needed, including handling customer or staff situations that may occur outside of typical work hours.
Able to work well under pressure and enjoy a fast-paced environment.
Excellent communicator who values teamwork and collaboration.
Able to combine strategic planning and day-to-day management.
Physically able to stand, sit, walk, push, pull, crouch, and lift or carry objects up to 40 pounds or more.
