We are currently recruiting for a **full-time COMMISSARY CHEF DE PARTIE**, reporting to the Executive Chef. Our culinary team proudly operates a “scratch” kitchen using only the finest and freshest ingredients.
The Commissary Chef de Partie performs as a leader in the Kitchen, supporting the Executive Chef and Sous Chefs in food production and may assume the duties of the Sous Chef in their absence. General responsibilities:
- Support the Chefs in a fast-paced, quality production kitchen, ensuring the successful execution of large-scale production for a variety of banquet and convention events.
- Ensure our high-quality culinary offerings are produced to meet the demands of our two Cafes and mobile F&B Retail operations.
- Participate in coordinating the flow of work within the culinary department, such as preparation lists, assigning duties, training and supervision of employees, to maximize quality and efficiency.
- In collaboration with other culinary team members, prepare and coordinate orders to ensure they are prepared and cooked in a consistent and quality manner and meet event and Retail operations deadlines.
- Primarily responsible for preparing sauces, stocks, soups, dressings and butchery, following the specific recipes as directed by kitchen leaders.
- Utilize proper recipes to ensure consistent quality; presentation technique and quality standards.
- Liaise with managers within our operation as needed to ensure that all event and internal needs are met.
- Assist in implementing and ensuring compliance with health and safety regulations, sanitary practices for food handling, safe equipment use, general cleanliness, and maintenance of kitchen and other areas.
- Contribute to the goal of 100% client and guest satisfaction through personal commitment to customer service and leading the culinary team by example.
- Perform other related duties, tasks and responsibilities as required from time to time.
**KEY REQUIREMENTS**:
- Formal Culinary training. Food Safe Certification.
- Demonstrated passion for high-quality culinary practices, with 3+ years of similar experience in a high-volume hotel or convention centre strongly preferred.
- Experience in large volume cooking for Banquet events in a Facility that holds multiple events is required.
- Must have strong leadership and decision-making skills, with a minimum of 2 years of Supervisory experience.
- Proven ability to motivate and direct employees to assigned activities.
- Strong focus on service excellence and a positive attitude that contributes to teamwork.
- Ability to adapt quickly to change, and work efficiently under pressure to meet deadlines in a high-volume capacity.
- Proficient written and spoken English communication skills to effectively interact with team members in a busy environment and for safety within the kitchen.
- Ability to work a variety of shifts across 7-day opening hours, including early mornings, days, evenings and weekends, sometimes before public transit.
- Computer proficiency specifically in Outlook, Word and Excel.
**OTHER REQUIREMENTS**:
- Must be able to lift up to 50 pounds in weight (pots, pans, etc.) and carry several feet.
- Physically fit to stand for long periods of time and walk long distances in the large Facility, as well as perform repetitive motions.
