**POSITION PURPOSE**

We are looking to hire a skilled assistant sushi chef to prepare sushi dishes in accordance with food health and safety regulations and restaurant standards. The assistant sushi chef’s responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and keeping par levels for supplies as needed. You should also be able to customize customers’ orders according to preferences and food allergy considerations.

To be successful as an assistant sushi chef, you should ensure that all ingredients used in dishes are of the highest quality. Ultimately, an exceptional sushi chef should work well under pressure and maintain restaurant standards during busy periods

**Assistant Sushi Chef Responsibilities**

Expertly cutting, slicing, and filleting different types of fish.

Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard.

Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.

Maintaining a clean work environment in order to prevent food contamination.

Regularly taking inventory of food supplies and other products.

Reporting any problems with kitchen equipment to the manager on duty.

Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.

Communicating with wait staff to ensure that special requests and food allergy considerations are met.

**OTHER**

Maintains the kitchen, storage rooms, and operating equipment in an attractive, sanitary manner according to local & Provincial health regulations, quality assurance and maintenance standards.

Have a thorough knowledge of all fire and safety procedures and equipment (fire extinguishers) in the event a situation occurs.

Maintain a neat, clean and well-groomed appearance as per Windermere Hospitality Inc. Standards.

Attend morning briefing/department head meetings.

Provide support and leadership to team members in the department and throughout the Hotel.

**HEALTH & SAFETY**

Work in compliance with the Occupational Health & Safety and its regulations by:
Performing workplace inspections

Conducting information sessions (safety talks, staff meetings, etc.)

Conducting incident investigations

Conducting employee training

Correcting substandard acts or conditions

Commending employee and supervisor health and safety performance

Performing employee safety observations.

Initiates a Health and Safety Continuous Improvement Plan

Reviews Health and Safety Trends

Responds to health and safety committee or worker representative recommendations.

Established a program to regularly communicate health and safety information.

Integrates health and safety into all aspects of the organization.

Records health and safety program reviews and changes

Regularly encourages off-the-job health and safety activities for all workers.

Executive management performs workplace inspections.

**EDUCATION/EXPERIENCE**

Experience is preferred, though we will train.

Passion and a good attitude will go a long way.

We are in continuous recruitment for recent culinary graduates and or Co-Op culinary students.

Strong culinary skills in a commercial environment

Comfortable in face-to-face situations with the Hotel's Client.

Ability to communicate effectively in English.

Excellent time-management skills.

The ability to work under pressure.

Valid food handler’s license.

Exceptional customer service skills.

**WORK ENVIRONMENT**

The environment in the kitchen that the Cook works in can become stressful when the restaurants are operating at full capacity. Also, the Cook must be capable and comfortable greeting clients on walk-a-bouts during service.

**PHYSICAL DEMANDS**

Walking and standing are required for all times during a shift.

Most work tasks are performed in the kitchen. Temperature is moderate and controlled by the hotel environment.

Talking and listening occur continuously in the process of communicating with other cooks, FOH staff members and supervisors.
