**Job Overview**:
As a **Chef de Partie - Line Cook** at **La Mochi Donuts & Sweets**, you will play a critical role in delivering high-quality dishes that meet the standards of our establishment. You will be responsible for managing a specific section of the kitchen, preparing food according to set recipes and guidelines, and ensuring that service runs smoothly. You will work alongside the kitchen team to ensure consistency, quality, and cleanliness.
**Key Responsibilities**:
- **Food Preparation**: Prepare and cook food according to established recipes and menu guidelines.
- **Section Supervision**: Oversee a particular section of the kitchen (e.g., grill, sauté, fry, pastry) and ensure all dishes are prepared efficiently and on time.
- **Mise-en-place**: Ensure all ingredients and tools are ready before the shift and are kept well-stocked throughout service.
- **Presentation**: Ensure that dishes are presented correctly, with proper portion sizes and garnishes, maintaining the restaurant’s standards.
- **Quality Control**: Monitor food preparation and cooking methods to ensure quality control and consistency in all dishes served.
- **Teamwork**: Work collaboratively with other sections of the kitchen and help train junior kitchen staff, apprentices, or interns as needed.
- **Health & Safety**: Adhere to all food safety and hygiene regulations. Maintain a clean and organized workstation, following the restaurant’s cleaning schedules.
- **Inventory Management**: Assist in managing stock levels for your section, ensuring all ingredients are fresh and properly stored, and report any shortages.
- **Communication**: Maintain clear communication with the Head Chef and Sous Chef to ensure smooth kitchen operations.
- **Menu Development**: Contribute ideas for new dishes, specials, or improvements to existing recipes.
- **Equipment Care**: Take responsibility for maintaining the kitchen equipment in your section and reporting any issues to management.
- **Waste Reduction**: Ensure proper use of ingredients to minimize waste and help maintain cost control.
**Qualifications and Skills**:
- Proven experience as a Chef de Partie or Line Cook in a fast-paced kitchen.
- In-depth understanding of food safety and sanitation standards.
- Ability to work well under pressure in a busy kitchen environment.
- Knowledge of various cooking techniques and methods.
- Excellent time management and organizational skills.
- Ability to follow detailed recipes and instructions accurately.
- Strong communication and teamwork skills.
- Flexibility to work evenings, weekends, and holidays.
- Culinary school diploma or equivalent experience preferred.
**Physical Requirements**:
- Ability to stand for extended periods of time.
- Ability to lift and carry heavy items up to 40 pounds.
- Ability to work in a hot and fast-paced environment.
