Responsibilities and Tasks
- Operate slicing and cutting machinery to process, portion, and package raw and cooked food products.
- **Cut, trim, debone, and portion raw poultry and meat products according to company specifications for restaurant use.**:

- **Marinate, season, and portion poultry and other proteins following standardized recipes and safety protocols.**:

- Oversee and participate in the preparation of **Chinese handmade goods (dumplings, wontons, spring rolls, noodles), Chinese beverages, Chinese desserts, sauces, and other traditional components**, ensuring authenticity, quality, and consistency.
- **Supervise and participate in raw poultry cutting, marinating, and packaging,** ensuring proper food safety practices, efficient workflow, and quality control in all protein preparation activities.
- Establish and implement methods to meet work schedules and coordinate production with other departments such as kitchen operations, logistics, and inventory management.
- Resolve work problems and recommend measures to improve workflow, productivity, and product quality.
- Requisition and maintain adequate levels of materials, ingredients, and supplies, including specialty Chinese ingredients for handmade production and fresh proteins for poultry processing.
- Train staff in job duties, safety procedures, company policy, and specialized skills related to **Chinese handmade food, beverages, desserts, sauces, and poultry preparation.**:

- Operate machinery to bag, box, or otherwise package food and beverage products for storage or distribution.
- Inspect and check products for defects or inconsistencies to ensure they meet company and food-safety standards.
- Record production data, quality-control information, and equipment readings.
- Set up, adjust, and calibrate slicing and packaging machines; make minor adjustments to maintain precision and consistency.
- Clean and sanitize machinery, utensils, and immediate work areas before and after use.
- Maintain a detailed shift log of production, cleaning, and maintenance activities.
- Requisition or order materials, equipment, and supplies as needed to maintain steady production flow.
- Supervise, coordinate, and schedule (and possibly review) activities of up to 3 - 4 labourers in food and beverage processing.
- Establish methods to meet work schedules and coordinate with other departments such as sauce production, handmade goods, and packaging.
- Train staff/workers in job duties, safety procedures, and company policies.
- Recommend measures to improve productivity and product quality.
- Prepare daily and weekly production reports and inventory summaries.
- Ensure food-safety and occupational-health regulations are followed at all times

- **Experience**:

- Minimum of **2-3 years of experience in food production or food and beverage processing**, with at least **1 year of supervisory experience**.
- Demonstrated experience in the preparation and supervision of **Chinese handmade goods, beverages, desserts, sauces, and poultry cutting, marinating, and packaging** is required.
- Experience with inventory management, scheduling, and coordinating multi-departmental production is an asset.

Supervision
- Labourers in food, beverage, and tobacco processing (3-4 people)
