**Chief Steward**

The primary function of the Chief Steward is to supervise, coordinate and direct the operations of the Stewarding Department in an effective, efficient and profitable manner. The Chief Steward is expected to maintain the smooth operation of their department to maximize labor efficiency, maintain budgeted labor costs, guarantee safe working conditions, and keep the highest standards of sanitation. In your role, a clean and sanitary kitchen makes you smile and you know just how to keep everything to the high sanitation standards expected of your team. Your staff make the kitchen shine and understand that spotless - be it flatware, dishes, pots, a stove or the actual kitchen itself - is essential as both guests and associates rely on the stewarding department for their continued good health.

You are an Chief Steward and in that role you will:

- **Be a Details Person -** ensuring the cleanliness of all dishware, service ware, cookware, utensils and related, including polishing stainless and silver ware as needed.
- **Understand Clean and Sanitary** - the need for your team to maintain the kitchen by keeping all equipment - ovens, floors, walls, walk ins, vents, cooking services, trash bins, etc. - clean and sanitary. From time to time you will hve your stewards do a deep cleaning to keep all up to standards.
- **Walk the Talk -** as the Chief Steward you need to be walking your hotel kitchen(s) every day - getting out and inspecting the areas you are responsible for and training or retraining your team when things don't meet expectations.
- **Be a Leader -** Lead a diverse, motivated team.
- **Be a Safety & Security Agent -** follow your hotel's established safety and security policies & procedures as well as all OSHA guidelines, reporting issues to maintenance and/or security. Be Manager on Duty if requested.

**Position Summary**: The primary function of the Chief Steward is to supervise, coordinate and direct the operations of the Stewarding department in an effective, efficient and profitable manner. Based on established guidelines, they must keep work area clean and organized as well as conduct their self in a positive professional manner.

**Accountabilities**:The Chief Steward is expected to take a hands-on approach to maintain the smooth operation of the Stewarding department to maximize labor efficiency, maintain budgeted labor costs, guarantee safe working conditions, keep the highest standards of sanitation, monitor/control daily food & beverage costs and safeguard inventories. The Chief Steward reports directly to Food & Beverage Director and Executive Chef.

**Qualification Standards**

**Education & Experience**:

- At least two (2) year of progressive experience in the procurement, food & beverage, culinary or related field
- High School diploma or equivalent required
- Previous leadership/supervisory responsibility required
- Previous experience with inventory management required
- Computer experience required eg. Word and Excel
- Food Safe and First Aid certifications preferred
- Valid NS Driver's License required (must be able to deliver offsite catering)

**Physical Requirements**:

- Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects
- Ability to work long hours, some back to back shifts as needed; Standing for long stretches of time
- Ability to work under variable temperatures and noise levels
- Near Vision - ability to see details at close range
- Ability to bend, stretch, twist or reach with your body and arms

**Mental Requirements**:

- Oral and Written Comprehension and Expression - Must be able to convey information and ideas clearly in English
- Must be able to evaluate and select among alternative courses of action quickly and accurately
- Must be effective in handling problems in the workplace, including anticipating, preventing, identifying, and solving problems as necessary
- Must work well in stressful, high pressure situations
- Must maintain composure and objectivity under pressure
- Must be effective at listening to, understanding, and clarifying the concerns and issues raised by co-workers and guests
- Must be able to understand English both verbal and written
- Mathematical Reasoning - Must be able to work with and understand basic arithmetic functions
- Multi-lingual helpful

**Essential**:

- Maintain regular attendance, as required by scheduling which will vary according to the needs of the hotel
- Flexible to work scheduled shifts based on business levels - including evenings, weekends and holidays
- Maintain high standards of personal appearance and grooming when working
- Comply at all times with operating standards and regulations to encourage safe and efficient hotel operations
- Responsible for recruiting, training, supervising, leading and managing the performance of all stewarding employees
