Windigo Contracts LP. has several remote camps in Northern Ontario. All positions Fly-in/ Fly-out on a 14-day rotation (14 days of work, followed by 14 days off) and 12-hour shifts.

Windigo Contracts LP is currently seeking experienced and responsible workers in the following position: Remote Camp Chef

**Overall Responsibility**

The overall role of the Chef is plan and prepare a quality meal service based on the requirements of the day-to-day menu.

**Accountability and Reporting**

The Chef is accountable to and reports to the Manager on duty.

**Main Function within the Organization Structure**

The main function of the Chef is to prepare quality meals, supervise and train to ensure the kitchen staff follow all health and safety regulations. The Chef always promotes good sanitary and safe food handling guidelines.

**Duties**
- Strictly follows safe food handling policies
- Always works safely and efficiently
- Helps to plan daily menu with Manager on duty
- Helps establish a daily prep list and makes sure these tasks are completed before tasks for the next day are started, unless authorized by the Manager
- Monitors coolers and freezers for proper rotation and labeling and dating of products, instructs persons responsible for assigned coolers to attend to their coolers as necessary
- Responsible daily for sorting out leftovers from previous night and utilizing as much product as possible for lunch bar and future use in menu items, traying up any raw product and placing these items in the freezer
- Replenishes throughout the whole kitchen environment - ie. cookies, lunch meats, juices etc.
- Pulls product from freezer in a proper time frame so product is thawed for use when needed
- Monitors the progress of items on daily menu ie; items are put in oven on time and proper internal temperatures are achieved
- Replenishes items in steam table in a timely fashion so products never totally run out
- Serves online
- Establishes which leftover items need to be put in the freezer and trays, wraps, and dates these items and places them in the proper location in the freezer
- Inspects the Combi-Oven and places this unit in proper wash/rinse cycle as necessary
- Completes End of Day Checklist - physically making sure all these items are in fact completed
- Completes temperature logs of freezers and coolers
- Cleanup at the end of service - wiping down counters and equipment, putting away leftovers, sweeping and mopping - cleanup should be done as a team effort, so it is accomplished fairly and effectively
- Cleaning of equipment and areas of the kitchen that need attention on a weekly basis - cleaning hoods and hood filters etc.
- Unloading of freight making sure all items are organized and put on shelves neatly - if time does not allow for proper organization or shelf space is limited please monitor on a regular basis and fill shelves as they become available
- The key role of the Chef on duty is to lead by example by displaying hard work ethic, organizational skills, and leadership to accomplish a top-notch meal each day as well as keeping the rest of the kitchen functions running smoothly
- Please report any equipment malfunctions or issues to the Manager or Maintenance Dept., so they can be addressed in a timely fashion
- Other necessary duties as assigned by the Manager on duty

**Qualifications**
- Red Seal or other certifications is an asset.
- Applicants must have a current Food Safe certificate.
- Remote camp cooking experience is an asset.
- Advanced First Aid is an asset.
- Be able to lift up to 50 lbs.

**Salary**: $25.00-$27.00 per hour

- 12 hour shift
